really simple and doesn't need a lot of ingredients


Answers:
Crushed corn flakes. A package of Lipton onion soup mix. Mix these together to taste. This is a guestamate. I use a half box to one pack mix. Dip the chicken in milk, then in the mixture then put on a baking sheet. Bake at 350-375 for 30-45 min until done.

Easy Chicken Parmesan

CLEAN OUT THE STUFF IN THE CAVITY, RINSE WELL, SPRINKLE WITH SALT & PEPPER. I ALSO SPRINKLE TARAGON. BAKE AT 350 (PREHEATED) UNTIL GOLDEN ABOUT 2 HRS DEPENDING ON SIZE

Rub the skin with a little butter, salt, pepper, and nutmeg -- bake @ 350F to 155F on a baby dial thermometer.

If it is a whole chicken you would use a bit more technique to get the dark meat done without drying out the breast. Start the roast with the chicken breast side down for 20 min, the roast on the side 20 min then the other side for 20 min and finish breast up (probably less than 20 min). Use the baby dial in the thigh at the bone and look for 150. Take out chicken cover and let rest breast down for15-20 minutes before carving. If you want to get "fancy" salt and pepper the cavity and stuff with some aromatics and sprinkle with dried thyme before roasting.

EASY BAKED CHICKEN DINNER

4-8 chicken breasts, bone in or boneless
1 can cream of celery soup
1 c. brown rice (UNCLE BEN'S? whole brown rice)
1 pkg. frozen mixed vegetables

In a serving baking dish lay defrosted chicken pieces side by side.
Spread 1 can of cream of celery soup over chicken. Cover with foil and bake at 350 degrees in oven for one hour. One the stove prepare rice and vegetables as directed. Serve all 3 items on each plate using chicken cream for gravy as requested.

EASY BAKE CHICKEN CORDON BLUE

4 whole chicken breasts, skinned & boned
8 slices Swiss cheese
8 slices baked ham
1 (10 3/4 oz.) can cream of chicken soup, undiluted
1/4 c. dry white wine
1 c. butter

Arrange chicken in 9 x 13 inch baking dish. Top chicken with ham and cheese. Combine soup and wine; spoon over chicken. Sprinkle with stuffing mix, drizzle butter over crumbs. Bake at 350 degrees for 45-50 minutes. Serve with rice. Excellent for a new bride, makes her feel like a gourmet cook.

The most simple and really delicious is as follows:

Salt and Pepper the chicken (after cleaning of course)
Make sure to salt and pepper the inside too.

Cut up one large onion. Put some onion on the inside. The rest of onion in baking pan. Add 1/2 cup orange juice if desired.

Let sit in fridge for about an hour or overnight (overnight is best)

Bake at 350 for about 1 1/2 to 2 hours (I cook mine about 2 1/2 hours cause I like it falling off the bone) Leave covered with foil for all time until last half hour.....baste often....enjoy....No muss no fuss and better than you ever thought. DON'T SKIMP ON SALT this will bake out and flavor like you won't believe (don't go crazy either) and pepper very well.......

Any excuse to buy a new gadget.

Clay pots are the way to bake a whole chicken.

Salt, Pepper, fresh Thyme and Sage, rub it all over inside and out. Bake in the clay pot at 250 degrees for an hour, raise temp to 300 for another 15 minutes.

Roasted Chicken with Garlic Confit

Some markets sell peeled fresh garlic cloves, which save time. You can use the leftover garlic oil from this recipe for sauteing greens or tossing with pasta. Garlic cloves can be cooked 1 week ahead and kept in oil, covered and chilled. Leftover garlic oil keeps, covered and chilled, 1 week.

12 garlic cloves (about 1 head), lightly smashed and peeled
3 fresh thyme sprigs
3/4 cup plus 1 tablespoon olive oil
1 (3-pound) chicken, quartered
1 tablespoon unsalted butter, softened

Put oven rack in upper third of oven and preheat oven to 500 degrees F.
Cook garlic, thyme, and 3/4 cup oil in a 1 to 1 1/2-quart heavy saucepan over low heat, uncovered, until garlic is very tender but not golden, about 25 minutes.
While garlic is cooking, pat chicken pieces dry and rub all over with butter and remaining tablespoon oil. Sprinkle all over with salt and pepper. Arrange chicken, skin sides up, in a shallow baking pan and roast 20 minutes.

Transfer garlic to a small bowl along with 1 tablespoon garlic oil and mash with a fork. Spread mashed garlic over skin of roasted chicken, then return chicken to oven and roast until just cooked through and skin is crisp, about 5 minutes.

Broccoli Cheese Chicken and Stuffing

Prep Time: 15 min. - Cook Time: 40 min.

4 1/2 cups Pepperidge Farm(R) Herb Seasoned Stuffing
2 tbsp. butter OR margarine, melted
3/4 cup water
1 pkg. (10 oz.) frozen chopped broccoli, thawed
6 boneless chicken breast halves
Paprika
1 can Campbell's(R) Broccoli Cheese Soup
1/3 cup milk

Directions:
CRUSH 1/2 cup stuffing and mix with 1 tbsp. butter.
MIX water, remaining butter and broccoli. Add remaining stuffing. Mix lightly. Spoon into 3-qt. shallow baking dish. Arrange chicken over stuffing. Sprinkle with paprika.
MIX soup and milk. Pour over chicken. Sprinkle reserved stuffing mixture over soup mixture.
BAKE at 400oF. for 40 min. or until done.

Serves 6.

Spicy Chicken Bake [4 servings]

1 roasting bag
4-5 boneless skinless chicken breasts
1 onion
1 can rotel (diced type)
salt and pepper

Cut chicken breasts into strips.
Sprinkle seasoning that came with roasting bag over chicken.
Dice onion and sprinkle over chicken.
Pour can of Rotel over chicken.
Cook by directions on roasting bag.
Serve over rice.
