I have a pound of boneless chicken breast. Any ideas for dinner? (Please don't mention anything that will require "frying".)

Chipotle-Lime Grilled Chicken
Smoky chipotle marries lime juice and mild honey in this irresistible chicken dish, perfect for your next barbecue.
1/4 cup fresh lime juice
1/4 cup olive oil
2 1/2 Tbs chipotle Tabasco
3/4 tsp salt
6 large skinless boneless chicken thighs (2 1/2 lb total)
2 tsp mild honey
1 Prepare grill for cooking over direct heat with medium-hot charcoal (moderate heat for gas).
2 While coals are lighting, stir together lime juice, oil, Tabasco, and salt in a liquid-measuring cup. Put chicken in a large sealable bag and add 1/3 cup marinade (reserve remainder in cup). Seal bag, forcing out excess air, and marinate chicken at room temperature, about 15 minutes. Stir honey into remaining marinade until dissolved to make sauce.
3 Grill chicken (discarding marinade in bag) on lightly oiled grill rack, covered only if using a gas grill, turning chicken over occasionally and moving it to avoid flare-ups if necessary, until just cooked through, 8 to 10 minutes total.
4 Brush both sides of chicken with some of reserved sauce, then continue to grill, turning over once, until lightly browned, about 1 minute more. Serve chicken drizzled with remaining sauce.
Servings: 6

Grilled Chicken Quesadillas
This delicious recipe is prepared by using adobo seasoned grilled boneless chicken, layering tortillas with a combination of the chicken, cheese, and onion, and heating directly on the grill. Serve with salsa and sour cream.
2 lbs boneless, skinless chicken thighs or breast
adobo seasoning to taste
12 (10 inch) flour tortillas
1 1/2 cups shredded Mexican cheese blend
1 onion, chopped
1 (6 ounce) can sliced black olives, drained
1 (7 ounce) can diced green chilies, drained
1 Place the chicken on a plate, and sprinkle with adobo seasoning on both sides. Let it marinate for 15 minutes.
2 Heat grill for medium-high heat.
3 Lightly oil the grill grate. Place chicken on grill, and cook for 10 minutes per side, or until juices run clear. Remove chicken from grill, and cut into bite-size pieces.
4 Place one or two tortillas on the grill, and sprinkle with a thin layer of cheese, chicken, onion, olives, and chiles. Top with another tortilla, and grill until brown and crispy on both sides, about 3 minutes per side. Repeat with remaining ingredients. Cut into wedges to serve.
Servings: 6
Ready in: 1 hour and 5 minutes

Stuff it with a type of cheese, wrap it in bacon and place in the oven

My mother always made these two simple things with her's - one she would put a layer of dressing down, then the chicken breasts, and then melt mozzarella cheese over it and the other, rice, cream of mushroom mixed together with the chicken breasts thrown in.

I sometimes coat chicken in plain yogurt then roll in italian bread crumbs and bake.

cook it or bake it, then slice it to put on top of a nice spring salad mix......make you you put some veggies in there too, complete meal!!

Chicken Brigantine
6 chicken breasts (skinless&boneless)
? cup dry white wine
? tsp oregano
pinch garlic powder, salt, and fresh pepper
2 Tab butter
? lbs mushrooms, sliced
2 Tab flour
1 chicken bouillon cube, crumbled
? cups cold milk
In baking dish, arrange chicken in one layer
Mix together wine, oregano, garlic powder, salt and pepper to taste. Pour over chicken. Cover and bake in 350 degree oven for 30 minutes,
Meanwhile in a small skillet, melt butter;add mushrooms and sauté for 3 minutes or till tender. Stir in flour, bouillon cube and milk. Cook, stirring, for a few minutes until thick. Add salt and pepper to taste.
Emove chicken from baking dish, add mushroom mixture to liquid in in baking dish and blend well. Return chicken to dish and bake uncovered for another 20 minutes or until chicken is cooked. Makes 6 servings.



Lazy chicken

4-5 Chicken breasts
1 cup ketchup
? cup vinegar
? cup water
? cup brown sugar
1 pkg Lipton onion soup
pour over chicken in roaster, cook covered at 350 degrees for 1-1 ? hour.

Serve with rice.

For Chicken Breasts:

** This is a great one that's super easy...
Sprinkle poultry seasoning on both sides of all chicken breasts. Place in a glass pan. Open a can of 'cream of chicken' soup. Mix in 1/2 c. of sour cream. Pour mixture over chicken breasts. Cook at 350*F for 45-50 minutes or until juices run clear.

**For Mexican Style chicken breasts...My husband LOVES this recipe...
simmer a sliced green bell pepper and onion in butter or **OLIVE OIL** (what I use) until softened.- set aside. Do not drain pan. Add chicken breats to warm pan. Cook for 7 minutes on one side. Flip breasts and cook an addl' 7 minutes or until juices run clear. Top chicken with bell pepper and onion strips. Sprinkle with cheese and allow to melt!

**For an easy recipes that's different and uses items you may already have...This is soooo good.
Crush cheese nip or Ritz crackers. Melt 1/3 cup butter. Dip chicken in butter and coat in crushed crackers...Bake at 350*F for 45-50 minutes or until juices run clear.

**Also, if you want something SUPER easy and have the time, I use a bottle of Italian dressing and pour it into a freezer bag. Add sliced onion and green bell pepper (uncooked). Add thawed chicken breasts and allow to marinate for about an hour. Pour the entire mixture into a saucepan and cook chicken until juices run clear and sauce has thickened...So good...

Just put the chicken in a baking dish w/ a can of mushroom soup of top.. bake for about 30 mins. on 350.

CHICKEN ALFREDO

2 lbs boneless chicken breasts
4 tablespoons oil
1/4 cup butter
1/2 cup Parmesan cheese, grated
3/4 cup heavy cream
salt and pepper, to taste
1 lb fettucine

Heat oil in a 10 inch skillet. Cut chicken breast into strips. Add salt and pepper. Fry on medium heat until cooked through.

Sauce:

Melt butter in saucepan; add cream and cheese. cook over low heat, stirring constantly. Do not boil.
Cook fettucine in 3 quarts boiling water. Mix chicken and Alfredo sauce together. Drain noodles. Put sauce and chicken over noodles.

6 servings.

Chicken and Broccoli Alfredo


In just 20 minutes, you can serve a rich, satiny Alfredo sauce for chicken, broccoli, and pasta.

Prep/Cook: 20 min

1/2 pkg. linguine (8 oz.)*
1 cup fresh OR frozen broccoli flowerets
2 tbsp. butter
1 lb. boneless chicken breasts, cubed
1 can (10 3/4 oz.) Campbell's? Cream of Mushroom OR 98% Fat Free Cream of Mushroom Soup
1/2 cup milk
1/2 cup grated Parmesan cheese
1/4 tsp. pepper


COOK linguine according to pkg. directions. Add broccoli for last 4 min. of cooking time. Drain.

HEAT butter in skillet. Add chicken and cook until browned, stirring often.

ADD soup, milk, cheese, pepper and linguine mixture and heat through. Serve with additional Parmesan cheese.

Makes 4 servings

Tip: *Or substitute spaghetti for linguine

Ingredients:


1 can (10 3/4 oz.) Campbell's? Condensed Cream of Chicken Soup OR 98% Fat Free Cream of Chicken Soup
1 container (8 oz.) sour cream
1 cup Pace? Picante Sauce
2 tsp. chili powder
2 cups chopped cooked chicken
1 cup shredded Monterey Jack cheese
10 Mission? Fajita Size Flour Tortillas, warmed
1 medium tomato, chopped
1 green onion, sliced



Directions:



MIX soup, sour cream, picante sauce and chili powder.

MIX 1 cup picante sauce mixture, chicken and cheese.

SPREAD about 1/4 cup chicken mixture down center of each tortilla. Roll up and place seam-side down in 3-qt. shallow baking dish. Pour remaining picante sauce mixture over enchiladas. Cover.

BAKE at 350°F. for 40 min. or until hot. Top with tomato and onion.

TIP: For 2 cups chopped cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 1 lb. boneless chicken breasts or thighs, cubed, 5 min. or until chicken is done. Drain and chop chicken.

Cut into strips and coat with a mayo & grey mustard mix. Then put in a dish of seasoned bread crumbs. Place in a shallow baking dish. Bake at 350 for about 20 minutes. Enjoy!

Butterfly the breasts open or pound to 1/4" with a tenderizing mallet. Make some bread based stuffing with some sage in it. Place about 2 tablespoons of the stuffing on the flattened breast and secure with a toothpick. Sprinkle liberally with marinara sauce and bake in 350 oven for 30 - 45 minutes.
