something intresting we're both not fussy eaters i don't mind spending time but i don't want to it to take the whole day to make...desert ideas included if poss thanks.

Chicken and Broccoli Alfredo


In just 20 minutes, you can serve a rich, satiny Alfredo sauce for chicken, broccoli, and pasta.

Prep/Cook: 20 min

1/2 pkg. linguine (8 oz.)*
1 cup fresh OR frozen broccoli flowerets
2 tbsp. butter
1 lb. boneless chicken breasts, cubed
1 can (10 3/4 oz.) Campbell's? Cream of Mushroom OR 98% Fat Free Cream of Mushroom Soup
1/2 cup milk
1/2 cup grated Parmesan cheese
1/4 tsp. pepper


COOK linguine according to pkg. directions. Add broccoli for last 4 min. of cooking time. Drain.

HEAT butter in skillet. Add chicken and cook until browned, stirring often.

ADD soup, milk, cheese, pepper and linguine mixture and heat through. Serve with additional Parmesan cheese.

Makes 4 servings

Tip: *Or substitute spaghetti for linguine

Easy Nesquik Butterfinger Dessert


Graham cracker stacks are filled with crunchy Butterfinger- filled whipped cream for an unusual and yummy dessert. Kids will enjoy assembling this dessert almost as much as they enjoy eating it!

Prep: 25 min - Cool: 120 min

1 1/2 cups whipping cream
1/2 cup Chocolate Flavor NESTL? NESQUIK? Syrup, divided
3 (2-oz) bars NESTL? BUTTERFINGER Candy Bar, finely chopped, divided
30 graham cracker squares


BEAT cream in large mixer bowl until soft peaks form. Gradually beat in 1/4 cup Nesquik until stiff peaks form. Stir in 1 cup Butterfinger pieces.

SPREAD about 1 heaping teaspoon whipped cream mixture evenly onto each of 6 graham cracker squares; stack. Place stack on side on long platter or baking sheet. Repeat with remaining graham crackers and whipped cream mixture until 5 stacks are assembled. Press stacks together to form a loaf.

SPREAD remaining whipped cream mixture over top and sides of graham cracker loaf. Top with remaining Butterfinger pieces.

REFRIGERATE for at least 2 hours or overnight. To serve, slice diagonally across loaf into 1-inch slices. Place each slice on plate and top with remaining Nesquik.

Makes 8 servings

Lazy chicken

4-5 Chicken breasts
1 cup ketchup
? cup vinegar
? cup water
? cup brown sugar
1 pkg Lipton onion soup
pour over chicken in roaster, cook covered at 350 degrees for 1-1 ? hour.

Serve with rice.

Chicken Parmesean...it is sooo simple, and sooo delicious!
Just clean your chicken, and put it in a baking pan or a turkey pan with 1/3 inch of water, garlic to taste, and a few pats of butter. Just put it in the oven on 350 until its done, it might take an hour, depending on the pan and your oven. Then, pour some Prego on it (if you don't know how to make your own sauce), and load it with parmesean cheese. Put aluminum foil over it, and put it back in the oven until cheese is bubbly.
This is really good with some garlic bread and an italian salad.
Also, a dessert that compliments this perfectly is a mint ice cream, decorated with oreo cookies and hot fudge.

For dessert, try a grape salad (or frosted grapes as my coworkers call it):

2 cups powered sugar
1/2 cup sour cream
1 tsp lemon juice
8 oz cream cheese

mix that all together till smooth then add

1/2 cup walnuts or pecans
2-3 lbs. grapes

Granted...that'll make more than needed for two, but you can always munch on some later

i like to make casseroles..........anything you can toss together and toss in the oven is the best for anyone. I like to make a pizza pasta. cooked Elbow noodles, spaghetti sauce, sliced peperoni, mushrooms, green peppers or whatever else you like to have on a pizza, toss together, put in a dish, cover with your favorite cheese like mozarella, put a few pepperoni slices on top to look like a pizza, bake for 1/2 hour, at 350, poof your done. Side salad and garlic toast, quick and easy meal!

If he likes spicy make spicy food. If he likes sweet make him sweet food, etc.

Serves: 6



Ingredients:


1 can (10 3/4 oz.) Campbell's? Condensed Cream of Chicken Soup OR 98% Fat Free Cream of Chicken Soup
1 container (8 oz.) sour cream
1 cup Pace? Picante Sauce
2 tsp. chili powder
2 cups chopped cooked chicken
1 cup shredded Monterey Jack cheese
10 Mission? Fajita Size Flour Tortillas, warmed
1 medium tomato, chopped
1 green onion, sliced



Directions:



MIX soup, sour cream, picante sauce and chili powder.

MIX 1 cup picante sauce mixture, chicken and cheese.

SPREAD about 1/4 cup chicken mixture down center of each tortilla. Roll up and place seam-side down in 3-qt. shallow baking dish. Pour remaining picante sauce mixture over enchiladas. Cover.

BAKE at 350°F. for 40 min. or until hot. Top with tomato and onion.

TIP: For 2 cups chopped cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 1 lb. boneless chicken breasts or thighs, cubed, 5 min. or until chicken is done. Drain and chop chicken.


I personally don't like onions and tomatoes, so I just added more cheese on top. But since you did say you two aren't picky I would leave it as is...and for desert maybe some turtle brownies with vanilla ice cream

How about a nice fresh broiled sea bass & maybe w/a little fresh shrimp too.
The sauce would be w/a little olive oil, white wine,little chopped up tomatoes, 1 clove garlic, half sliced red onion, and a few greek olives.
Side dish fresh baby spinach leaves w/balsamic vinagrette, cukes, avocado, roasted red peppers, sprinkles of shredded parm cheese
slices of toasted garlic bread w/a little pesto smeared over it :-D

For dessert: a scoop of lemon sorbet, and a scoop of peace sorbet, garnish w/sprig of fresh *mint*
serve dinner w/a glass of reisling wine

If he is mostly eating fast Food... it is time to introduce him to healty eating. I recommend a "Chicken Ceasar Salad". Another good choice is a "Greek Salad". These are easy to make and utilize a small amount of utilities to prepare them saving fuel. You can change the kind of meat or leave it off it is still a great meal in any case.

spagetti bolegnese, roast chicken, casserole made with chicken or beef, salads,roasts.all these can be made the day before. jelly and ice cream apple tart and custard.bread pudding

Tonight I am making a baked chicken and stuffing casserole. I make the stuffing adding extra things I like to it. Then add broccoli, chicken breast, and mix in a can of cream of chicken soup. You can top it all off with cheese or leave it off. Bake it all in a pan until nice and browned. Yummy!!!!

You'll need a slow cooker for this

One package of chicken legs, or thighs or breast
skinned
One large can of Whole Tomatoes
fresh garlic

Put all in the slow cooker in the morning and set on low for 8-l2 hours and then serve over rice. (remove the bones after cooking)
