Why don`t you have a mexican theme dinner tonight?
Buy some hard taco shells and add some ground beef, tomatoes, lettuce, salsa, and cheese (guacamole and sourcream if you like). Then get some instant spanish rice. You basically just boil up some water and put the rice in.. after the rice is cooked you add the seasonign packet thing from the box. Then, get some canned refried beans and kinda mush it up a little with a spoon. Serve with sodas and juices and your all set to go. You got the tacos, mexican rice, and beans! Ohh and don`t forget the appetizers, buy some tortilla chips and buy/make your favorite salsa dip or if you wanna be creative, make some 7 layer dip. Yummm.. And fir desert, make/ buy some flan. Hope I helped! :]

Pumpkin fried rice

try spinach salad or mixed green salad with any dressing you want and meatballs with pasta.OR lemon rosemary chicken over with wild rice..... yummy... and red wine.

stove : pasta

oven and stove : chicken parmesan-oven fettuccine alfredo-stove

This is a good chicken recipe. You need some chicken tenders (uncooked). Some alluette garlic and herb cheese( its with the deli stuff at the store) and some pastry sheets (in the freezer section)
Let the pastry sheets thaw out and roll the sheets flat. Cut squares and put a piece of chicken (small) and a spoonful of the cheese on top. Fold the pastry over and press to seal. Pop in oven (375) for about twenty minutes or until brown.

Creamy Chicken Enchiladas

Prep Time: 20 min. - Cook Time: 40 min.

1 can (10 3/4 oz.) Campbell's(R) Condensed Cream of Chicken Soup OR 98% Fat Free Cream of Chicken Soup
1 container (8 oz.) sour cream
1 cup Pace(R) Picante Sauce
2 tsp. chili powder
2 cups chopped cooked chicken
1 cup shredded Monterey Jack cheese
10 Mission(R) Fajita Size Flour Tortillas, warmed
1 medium tomato, chopped
1 green onion, sliced

Directions:
MIX soup, sour cream, picante sauce and chili powder.
MIX 1 cup picante sauce mixture, chicken and cheese.
SPREAD about 1/4 cup chicken mixture down center of each tortilla. Roll up and place seam-side down in 3-qt. shallow baking dish. Pour remaining picante sauce mixture over enchiladas. Cover .
BAKE at 350 degreesF. for 40 min. or until hot. Top with tomato and onion. Serves 6.

TIP: For 2 cups chopped cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 1 lb. boneless chicken breasts or thighs, cubed, 5 min. or until chicken is done. Drain and chop chicken.


Herbed Chicken In Pastry

4 boneless chicken breast halves
2 tbsp. butter OR margarine
1/2 pkg. Pepperidge Farm? Frozen Puff Pastry Sheets
(1 sheet)
1 egg
1 tbsp. water
1 container (4 oz.) garlic & herb spreadable cheese
1/4 cup chopped fresh parsley

SEASON chicken with salt and pepper if desired. Melt butter in skillet. Add chicken and cook until browned. Remove chicken. Cover and refrigerate 15 min. or up to 24 hours.

THAW pastry sheet at room temperature 30 min. Mix egg and water. Preheat oven to 400°F.

UNFOLD pastry on lightly floured surface. Roll into 14" square and cut into 4 (7") squares. Spread about 2 tbsp. of the cheese spread in center of each square. Sprinkle with 1 tbsp. parsley and top with cooled chicken. Brush edges of squares with egg mixture. Fold each corner to center on top of chicken and seal edges. Place seam-side down on baking sheet. Brush with egg mixture.

BAKE 25 min. or until golden.

Pollo Genovese

INGREDIENTS:

2 pounds chicken breasts, boneless and skinless
4 tablespoons butter (1/2 cube)
4 tablespoons olive oil
All-purpose flour seasoned with salt and pepper for dredging
4 garlic cloves, minced
1 (6-ounce) can pitted olives, drained
1 cup fresh mushrooms, sliced
1 (26-ounce) can stewed tomatoes, with liquid
1/4 cup parsley, chopped
2 tablespoons capers, drained
1 tablespoon dried basil
1 cup white wine

TO PREPARE:

Preheat oven to 350 degrees.

Place chicken breasts between sheets of waxed paper and pound with a mallet until very thin. Cut chicken into bite-sized pieces.

In a large saute pan, heat butter and olive oil. Dredge chicken in flour and saute in small batches until golden brown. Place chicken in greased ovenproof casserole dish.

If necessary, add 1 additional tablespoon olive oil to pan and saute olives, mushrooms and garlic for 4 to 5 minutes. Add tomatoes, parsley, capers, basil and wine and bring to boil. Continue boiling for about 5 minutes to slightly reduce liquid.

Pour sauce over chicken. Bake in a 350-degree oven for 20 to 30 minutes. Serve over pasta.

SERVES: 6
