If you wanna make the real deal, this is how...

Fried Chicken
1 quart buttermilk, plus 2 cups
Kosher salt and freshly ground pepper
2 tablespoons hot sauce, plus 2 teaspoons cayenne pepper
2 chickens (3 to 4 pounds each), each cut up into 8 pieces
4 cups all-purpose flour
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon sweet paprika
Peanut oil, for deep-frying

In a large bowl or baking dish, whisk together 1 quart of the buttermilk, 2 tablespoons salt, 2 tablespoons hot sauce, and a little bit of pepper, if desired. Add the chicken pieces, turn to coat, cover, and refrigerate for at least 4 hours or overnight.

Place the remaining 2 cups of buttermilk in a bowl. Stir together the flour, garlic and onion powders, paprika, and 2 teaspoons cayenne in a large bowl. Divide flour mixture among 2 shallow platters and season generously with salt and pepper. Drain the chicken in a colander and pat it dry. Dredge the pieces a few at a time in the flour mixture and pat off excess, then dip in the buttermilk and allow excess to drain off. Dredge in the second plate of flour and pat off the excess. Put the chicken pieces on a piece of waxed paper or on a clean platter while you heat the oil.

Pour about 3 inches of oil into a deep cast iron skillet; the oil should not come more than halfway up the sides of the pot. Put the pot over medium-high heat and heat the oil to 375 degrees F on a deep-fry thermometer. Working in batches, add the chicken pieces to the hot oil, 3 or 4 at a time and fry, turning the pieces occasionally, until evenly golden brown and cooked through, about 20 minutes. Remove from the oil with a slotted spoon and transfer to a rack to drain; repeat to cook the remaining pieces. Serve hot.

Yield: 4 to 6 servings

combine all dry ingredients as you wish
dip chicken in egg then flour
put it a pan with oil about 2 inches deep
and fry untill both side are golden or until cooked

What I do is, dismember the bird by wings, breasts, thighs and drumsicks. Heat a quality oil in an electric skillet set at 350 degrees.

Season the meat with salt and pepper and then dust in flour. (Tossed in a bag with flour). When the oil is hot, add the chicken and turn once when the bottom is nicely browned (about 4-5 minutes). When both sides are evenly browned, reduce the heat to 225 degrees and cover. This allows the steam to cook and tenderize the meat. Cook for 45 minutes, or until the meat pulls away from the bone without effort. Yum!

all you have to do is season a bowl of flour with your favorite spices be it salt,pepper,whatever. Make sure you clean your chicken well with cold water. heat grease or oil at high temp and make sure it is good and hot before you put chicken in. to check it just sprinkle a pinch of flour into the grease and if it bubbles alot it's good. cover the chicken in flour and fry in the grease until golden but make sure the inside temp of the thickest part of the piece is 180 degrees Fahrenheit so you dont get sick. Alright let a professional handle this question. First thing, defrost your chicken pieces. Then take a bowl and add a egg or two. obviously scramble to make a dipping mixture. Then I take another bowl. I add some regular cornflakes some breadcrumbs, and garlic powder, you can add your seasonings of choice. then I add a 1/4 cup of flour. I crunch the mixture up and make an eve consitansy. Then dip defrosted pices into the egg stuff then the crunchy mixture. til covered. I place peices on a pan and place in fridge to chill . I heat up my skillet with oil and wait til hot enough then take chicken out and wala cook. Just make sure you cook long enough throughly, dont want any uncooked pieces.
