30 lbs of chicken and 20 lbs of ground round What do I do with all of that?

My mother come to my house today and she looked around my kitchen. Then she left.

I am newly separated 4 months now, I have custody of the kids. We are going through a divorce.

I really do not have that much experiance to go grocery shopping. I get what I need and leave. I also do not have the experiance to really cook a lot of things. So I tend to buy what I know how to cook.

Any ways to the point, My mother went and bought me groceries, looks like $200 dollars worth. 30 lbs of chicken, 20 lbs of ground round, 12 cans of every kind of vegetable, boxes of cerial, boxes of dried potatoes mac and cheese noodles, just all kinds of things.

I separated the chicken into nightly portions of dinner, same with the ground meat.

Any ideas on how to cook chicken differently every night?

a couple other ideas are bake the chicken, then it will be ready to use for chicken salad, or to cut up and put into a lettuce salad, or ready for sandwiches. you can cut some up into strips or real small pieces and sautee/fry in alittle oil with a package of taco seasoning mix (like ortega), maybe alittle bit of water, simmer, and put into taco shells w/shredded cheddar cheese, tomatoes or onions if you like too. if your family likes sweet potatoes you can bake the chicken in a roasting or baking pan with store or meat market type chicken gravy, peeled carrots and peeled and cut up sweet potatoes. you can bake chicken and top with ham, spinach and swiss cheese when the chicken is cooked thru. or you could add bacon and provolone instead. i dont know if it is whole or cut up...bone in or out. and ground beef...you can make beef tacos the same way just about. fry ground beef w/onions, add package of taco seasoning mix, then put into taco shell w/tomatoes, lettuce, shredded cheddar cheese. i think this is enough for now. good luck!

chicken - you can make 50 ways from here to tomorrow; buy yourself some BBQ sauce, some Lawry's seasoning sauce, some Teriyaki Sauce, any dressing you like that you can marinade it in.

Ground Beef - tacos, chili, burritos, Hamburger Helper (blech), lasagna, spaghetti, hamburgers, add it to some rice and some cream of mushroom soup for a "gruel" type food that so many men seem to like

you could grill with bbq sauce, bake with italian dressing or other marinade, fry using instant potato flakes as batter , make chicken fajitas etc... also leftovers are good to make chicken and rice soup or slice grilled skinless breasts to put over a salad.

Chicken and rice, stewed chicken with vegetables, baked chicken with baked potatoes, spaghetti with chicken cooked in tomato sauce, pan fried chicken with mashed potatoes and salad, save bones and skin, boil and strain for soup stock. Good old hamburgers, meatloaf is easy, meatballs and spaghetti, chili on toast points, kids like hamburger stew
with small sized or chopped vegetables. None of the above is difficult and your mom probably has a good meatloaf recipe. Spare the extra salt and hot spices as kids don't like them, and have jello or pudding from an easy made mix.

Wow that's a lot of meat! Here is one easy chicken idea, it is great! Place chicken in a baking dish, add one bottle of Italian dressing and bake for an hour and a half at 350. MMMM easy and taste great with any side dish.

Why do our parents do that to us?!?!?! Most of that meat has to be frozen immediately or it will rot before you can ever possibly eat it.

Ground beef is really versatile: lasagna, spagetti sauce, hamburgers, meatloaf. You and your children will have no problem going through that. Search "recipes & ground beef" on google and you will find a few million recipes. "Recipes & chicken" will get you just almost as many hits on google. However ...

I do not know if it is 30 pounds of breasts, 30 pounds of whole chickens, or thirty pounds of wings. That all makes a difference when you search for a recipe. In the short term, plan for chicken salad sandwiches and barbeque chicken - both are easy to make until you find more varied recipes.

Don't be afraid to experiment. Chicken Cordon Bleu calls for flattening the chicken, rolling it with cheese and ham, then breading and baking same. It's very good, but it's a pain in the butt. There's no reason you simply cannot bake a chicken breast, throw a slice of swiss cheese on it immediately after taking it from the oven, and add a slice of deli ham at the same time. Wait five minutes and serve. It is deilcious.

I do have kids (who are now adults) and I'd like to give you some advice about cooking for kids if that is okay.

Children don't need fancy meals or things with lot's of sauces. In fact, they seem to prefer foods where they can see what it is. What I mean is, that they may not take to casseroles etc. Oh, and I have found out that many young children don't like onion...So you may have to take that into consideration (or learn to hide the onion by grating it instead of chopping it) Most kids love noodles. Try to make food that is fun to eat. Pita bread pizzas can be healthy and are always popular.( a good way of getting kids to eat veggies) And even though balanced meals are good, it isn't the end of the world if they eat rubbish foods occasionally. If your children are old enough, they can give you a hand in the kitchen. They are more likely to eat something if they cooked it.

And relax. I am sure you will do well. Your mother has already shown that she is a great support. And I am sure she will help you with meal ideas any time.

Lemon Butter Chicken

For each large frying pan full of chicken pieces, melt 2/3 stick of butter and add 2 tablespoons of lemon juice. Put chicken pieces in, salt lightly, cover and simmer over low heat, turning occasionally for about 25 minutes or until done.

If liquid runs out, don't add more lemon juice. Add a little water from time to time. Make gravy by skimming off the fat and thickening with flour paste.

This is especially good for someone on a low salt diet, because it's a rare way to make delicious chicken gravy without any added salt at all.
