Amish friendship bread?!


Question:

Amish friendship bread?

in the recipe it says to add milk..is that really safe, since it's not refridgerated? does baking the bread in the end kill the bacteria or does the flour and sugar keep it safe? i know everyone eats it, but i was just wondering. also, i got the bread on the 14th and didn't do anything with it until the 18th. i know all you're supposed to do is mush it, but does it matter that i didnt mush it? thanks!

You are fine. Yogurts, sourdoughs and creme fresh are milk based recipes that are called to stand out of the fridge for a time. This friendship bread is really very forgiving, so don't worry about the 'mushing'. Enjoy your bread and be prepared to share the starter with everyone you know!

i was worried about that too. but yes its fine to use milk somehow it rises and doesn't matter.

I have known a few people to use milk and have no problems. It is better if you can get your hands on some raw milk.

I did the Amish Friendship bread thingy not too long ago. I mushed it like it said to , I'm not sure what would happen if you don't . I'd try to mush it real well before you do anything else. It is safe to put the milk in. I think it kind of turns to buttermilk. I baked mine and it was very delicious. Marcy

Amish Friendship Nut Bread - on Demand:

16 mini-loaves

1 1/2 cups amish starter
2/3 cup vegetable oil
3 eggs
1 cup white sugar
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/4 teaspoons baking powder
1 teaspoon vanilla extract
1/2 teaspoon maple extract
1 cup all-purpose flour
1 cup whole wheat flour
1/2 cup old fashioned oats
1/2 cup raisins
1/2 cup dates, chopped
1/4 cup shredded coconut
1/2 cup pecans, chopped

#1 Walnuts or Almonds can be used instead of Pecans.
#2 Preheat oven to 350°F (175°C) Grease 2 9x5 loaf pans.
#3 In large bowl, combine starter with oil.
#4 In small bowl beat eggs, salt, baking soda, baking powder, vanilla, and maple extract.
#5 Add egg mix to the starter mix, and beat well, slowly adding in 1 cup all purpose flour, then adding in 1 cup whole wheat flour, then add old fashioned oats.
#5 Add nuts, dates, raisins, coconut.
#6 Pour into greased pans and bake in pre-heated oven at 350° for 50 - 60 min depending on your oven.

#8 These do not really create a problem to where more moisture is required, it just makes the loaf a little more solid. If you feel mix is too dry I suggest 1/2 cup applesauce.
#9 *Add 1/2 to 3/4 cup Post Select Grains (any of those flavors work GREAT).
#10 *Add 1/2 cup flax seed.
#11 *Add 1/2 cup cooked barley or rolled (uncooked)(if you can find it).
#12 *Add 1/2 cup dried cranberries.
#13 *Add 1/2 cup trail mix - your choice.
#14 *Add 1/2 cup any FRESH fruit, diced to small bite size --
#15 I have been out of some of the dried things above and crumbled up 2 granola bars just to add some "special" - worked Great!
#16 I personally make these in small mini-loaves, wrap in clear wrap when completely cooled. They make a really nice present for showing you think of someone. The UPS man, mailman, etc. Just a nice way to say "Thanks for taking care of me".
