What do you do if your eggwhites don't get stiff -and stay liquidy?"?

Several things come to mind with this problem, are your eggs fresh, did you take special care to see that none of the yolk got into them?I've read that chilling the bowl helps as well. Best suggestion is to try again.How long are you beating them for? The longer you beat them it ensures a better result as well

you need to beat them for a while until stiff peaks form . If you over beat them it won't work you have to start with new eggwhites

You are probably using old eggs.

As eggs get older the protein structures break down, which will make eggs more watery.

Add a little cream of tarter and if that doesn't work start all over again with new eggs and whip them on high.

Add 1 tablet of Viagra, have a cocktail....then proceed.

Egg whites will not whip if you have not separated them carefully (yolk in egg whites) or there is any grease on the bowl or beaters. They must be clean. Basically, you have to start over.

u kept it in there 4 a long time.

1) eggs at room temperature works best
2)Make sure there is NO yolk in the whites otherwise they will not peak
3)make sure the bowl and the beater is sparkling clean and oil free otherwise the will not whisk
4)creme of tartare (pinch) can help to stabilize the white
5)make sure the eggs are not too old

egg whites need to be beaten to form what they call soft peaks......... you can also add 1/4 tsp cream of tarter when beating them this will help them keep there peaks.
