why some recipe calls for egg and some doesnt?


Answers:
Adding egg to your pastry changes the colour and texture. If you want a flaky, buttery crust, do not use any egg. If you want your pastry a little darker, more golden in colour and more substantial, heavier in texture, add an egg yolk.

Go for flavor and texture first. Skip the egg.
