Sausage & Green-Pea Pie

Ingredients:
2 tsp olive oil
1 pkg (about 1 lb) lean sweet Italian turkey sausage, removed from casing
2 cups tomato Alfredo pasta sauce (from a 26-oz jar)
1 1/2 cups frozen green peas
1 tube (11 oz) refrigerated lowfat soft breadsticks (12 per tube)

Prep:
1. Heat oven to 375?F. Have a 9-in. pie plate ready
2. Heat oil in large nonstick skillet. Crumble sausage into skillet and stir over medium heat until no longer pink. Stir in Alfredo sauce, frozen peas and 1/3 cup water. Bring to a boil; pour into pie plate.
3. Unroll and separate breadsticks. Twist as shown in photo. Place on sausage mixture in a lattice pattern, pressing ends to edge of pie plate, trimming ends as needed.
4. Bake 25 minutes until breadsticks are baked through.

ENGLISH PEA PIE

Cook peas until tender. Season with butter. Add enough flour to make a thick sauce. Add salt and pepper to taste. Pour in pan to cover with pie crust and bake. Brush butter on top.

That's it -- no quantities, no baking time, no nothing. Personally, I'd cook about three cups of fresh peas in a very small amount of water, then drain and reserve what's left of the cooking liquid when they're tender.

Cook a tablespoon of flour and butter together to get rid of the raw flour taste, then add the reserved water to make a sauce. Season with salt and pepper.

Put the peas in a pie pan, gently mix in the sauce, cover with the pie crust, and bake at 350 degrees until brown.

4 cups water
1/2 cup oil (not olive oil)
1 tablespoon salt
1/4 teaspoon black pepper
1 egg, beaten
ground cumin, for sprinkling
harissa (optional)

1. Combine flour, water, oil, salt and pepper in food processor until mixture is smooth.
2. Pour into glass or metal pan at least 6" x 10".
3. Pour the beaten egg over.
4. Bake 375 degrees for 1 hour or until top becomes golden.
5. Sprinkle with cumin.
6. Slice and serve on baguette with harissa or other hot sauce.
