Chorizo, question for cooks?

when you open the pack of chorzio it has a thin wrapping or skin on the chorizo, do I peel that off before cooking?

It's like a sausage casing, if you wish the chorizo to retain it's shape leave it on, if you wish to break up the chorizo meat into the dish you are preparing peel it off and break up the meat as you would with any other sausage.

Yes it is a thin layer of plastic.... I am Mexican American Love chorizzo with potatoes or chorizzo and eggs... rolled up in a flour tortilla or if your heath conscious then corn tortilla ,,, with a jalapeno ... Ooh that's the bomb!!!!

You can peel it out before eating if you wish, but I haven't see anyone doing so ever.

I made chorizo nachos on Cinco de Mayo and I peeled it off because it was harder to cut with it on. I threw it in the food processor to finely chop it for the nachos and my daughter thought it tasted like bacon bits!!
