My fiancés birthday is on Thurs. I want to make him an exceptionally tasty birthday cake. I don't have much money to spend so hopefully it won't be too costly. But I want it to be really special. He's not much into store bought cakes. Any ideas??

Is It Really Better Than Sex Cake
1 (18.25-ounce) box yellow cake mix, plus ingredients to prepare
1 (20-ounce) can crushed pineapple
1 1/3 cups sugar
1 (3.4-ounce) box French vanilla pudding, plus ingredients to prepare
1 1/2 cups heavy cream
1 cup flaked, sweetened toasted coconut
Preheat oven to 350 degrees F.
Prepare yellow cake mix as directed using a greased 13 by 9 by 2-inch pan and bake for 30 to 35 minutes. While cake is baking, combine the pineapple and 1 cup of sugar in a saucepan, and bring to a boil over medium heat stirring constantly. Remove from heat and allow to cool slightly.
Remove cake from oven and using a fork, pierce holes into cake. Pour pineapple mixture over hot cake and set aside.
Prepare pudding according to package directions. Spread pudding over cake and refrigerate until thoroughly chilled. Whip heavy cream and remaining sugar until stiff. Cover top of cake with whipped cream and sprinkle toasted coconut on top.

most types of bundt cakes are good, and very moist. I like a Pistachio bundt cake. Made with a cake mix, almond extract, and instant pistachio pudding.:
1 pkg white cake mix
3/4 cup oil
3/4 cup water
4 eggs
4 tsp almond extract
1 pkg instant pistachio pudding
mix all together for 5 minutes. Pour into prepared pan. Bake at 350 deg for 55 minutes. Let stand 10 minutes before removing from pan. Sprinkle with powered sugar when cool

3 cups of sugar
8 teaspoons of water
4 tablespoons of finely chopped garlic cloves
2 eggs
2 jars of dill pickles, grated
4 teaspoons of red pepper flakes
bake at 350 for 1 hour and enjoy!

This is Southern Living's most requested recipe.
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
1 teaspoon ground cinnamon
3 large eggs, beaten
1 cup vegetable oil
1 1/2 teaspoons vanilla extract
1 (8 ounce) can crushed pineapple, undrained
1 cup chopped pecans
2 cups chopped bananas
1/2 cup chopped pecans
Cream Cheese Frosting
1 (8 ounce) package cream cheese, softened
1/2 cup butter or margarine, softened
1 (16 ounce) package powdered sugar, sifted
1 teaspoon vanilla extract
Combine first five ingredients in a large bowl; add eggs, and oil, stirring until dry ingredients are moistened.
(Do not beat) Stir in vanilla, pineapple, 1 cup pecans, and bananas.
Pour batter into 3 greased and floured 9" round cakepans.
Bake at 350 degrees F for 25-30 minutes or until a wooden pick inserted in center comes out clean.
Cool in pans on wire racks 10 minutes; remove from pans, and cool completely on wire racks.
Spread Cream Cheese Frosting between layers and on top and sides of cake; sprinkle 1/2 cup chopped pecans on top.
Store in refridgerator.
Cream Cheese Frosting: Beat cream cheese and butter at medium speed, with an elelctric mixer until smooth.
Gradually add powdered sugar, beating at low speed until light and fluffy.
Stir in vanilla.
Yield: 3 cups.
"Hummingbird Cake" Recipe #42827
This cake is soooooo good! I made it word for word as the recipe says, the only change being that I put chopped pecans all around the side because my husband and I both love pecans! It was very easy to make and as I mentioned already - the taste was amazing! The only thing I would think about doing different is to bake it in 2 round pans instead of 3 - just for simplicity of serving!
This recipe is so delicious and BEAUTIFUL when it comes out of the pan! (I recommend sifting cocoa pwder on top and adding chocolate shavings)
Chocolate Mousse Cake
2 dozen macaroons, crumbled
1/2 cup kaluia or strong espresso
1/2 pound (2 sticks) butter
1 cup sugar
6 eggs, separated
2 ounces unsweetened chocolate, melted
1/2 teaspoon vanilla extract
1 dozen double ladyfingers, separated in 1/2
3/4 cup heavy cream, whipped with 3 tablespoons sugar until stiff
Soak crumbled macaroons in kaluia or espresso. With an electric mixer, cream the butter and sugar together until fluffy. Beat in 6 lightly beaten egg yolks. Add the melted chocolate, vanilla, and soaked macaroons. In a separate clean mixing bowl, beat the 6 egg whites until stiff and then fold into chocolate mixture.
Grease a springform pan and then line it with separated ladyfingers. Alternate layers of the chocolate mixture with the remaining ladyfingers. Chill at least 4 hours. Remove from pan and decorate with whipped cream.

My son and I made an "Incredible Melted Ice Cream Cake" this weekend and it was a big hit, and super easy:
2 cups melted ice cream (a pint of Ben and Jerry's - any flavor)
1 box of white cake mix
3 large eggs.
Beat all of these ingredients together with a mixer for one minute at low speed. Scrape the sides down with a spatula. Mix for 2 minutes more at medium speed. The batter will be thick and smooth. Pour into a greased and floured bundt pan and smooth out the top. Bake at about 350 for 45 minutes or until the sides begin to pull away from the pan and the cake springs back when you press your finger into it. Allow to cool in the pan on a wire rack for 20 minutes. Run a knife around the sides and invert. Allow to cool and frost with your favorite frosting, to match the ice cream flavor that you used.
