Sour cream recipes?

i have this jar of sour cream just sitting in the fridge . . .. does anyone have recipes that include sour cream? i wanna use it up before it expires :3

Sour Cream Cornbread

1/2 cup Flour
1 1/2 cups Cornmeal
1 teaspoon Salt
1 teaspoon Brown sugar
1 tablespoon Baking powder
3 Large eggs, room temperature
3/4 cup Low-fat sour cream, room temperature
1/2 cup Skim milk
8 tablespoons (one stick) unsalted butter, melted

Preheat the oven to 400°F. Coat a 9" x 9" pan with nonstick spray.

Sift the flour, cornmeal, salt, brown sugar and baking powder together in a mixing bowl. (This can be done the night before and kept covered on the counter.)

Stir in the eggs, sour cream, milk and butter with a wooden spoon until the dry ingredients are just moistened. Do not overmix.

Pour into the pan and bake until golden brown around the edges, about 15 minutes. The cornbread is done when a small knife inserted in the center comes out dry. Best when served warm from the oven.


Sour Cream Chicken
Yield: 12 Servings

12 Chicken breasts
2 c Sour cream
1 Lemon; juice of
2 ts Worcestershire sauce
1/4 ts Celery salt
1/2 ts Paprika
Pepper to taste
1/4 ts Onion salt
1/4 ts Garlic salt
1 1/2 c Fresh bread crumbs
1/2 c Melted butter

Butter a glass baking dish. Combine sour cream,
lemon juice, worcestershire sauce, celery salt,
paprika, pepper, onion salt and garlic salt. Pour
over chicken in baking dish and marinate overnight
in the refrigerator.

When ready to cook, sprinkle with bread crumbs and
half of the butter. Bake, covered, 45 mintues at
350°. Uncover, drizzle with remaining butter and
bake an additional 15 minutes.

Outside of dips (just add spices), and in pancake mixes, you might add some to mashed potatoes instead of butter, mix it with some garlic and ground beef for a cream sauce.
Basically use it as a substitute for yogurt or butter in the recipes you normally do. Rice for example or pasta for more of a white sauce.

Sour Cream Chicken Enchilladas are a wickedly good way to use up sour cream. :-)

3 1/2 cups Sour cream
3 5-oz Cans boned chicken, cut up (about 2 cups)
2 4-oz Cans mushroom stems and pieces, drained
1 4-oz Can green chilies, drained
1/3 cup Onion flakes
1 tsp Chili powder
1/2 tsp Salt
1/2 tsp Garlic powder
1/4 tsp Pepper
Salad oil
12 Tortillas
1/3 lb. Cheddar cheese, shredded

Preparation:

In a 13" x 9" pan, spread 1 cup of sour cream; set aside. In 2-qt. saucepan, with fork, flake chicken; add 1/2 cup sour cream, mushrooms, green chilies, onion flakes, chili powder, salt, garlic powder and pepper. Cook over low heat, stirring occasionally, just until heated through.

Preheat oven to 450 degrees F. In 8-inch skillet over medium-high heat, in about 1/2-inch hot salad oil, fry 1 tortilla a few seconds on each side until softens. (Or warm them in the microwave between two wet paper towels for about 30 seconds.)

Spread about 1/4 cups chicken mixture, along center of the tortilla; fold sides of tortilla over filling and place seam side down, in the sour cream in the pan. Repeat, making 11 more. Spread enchiladas generously with remaining sour cream, then sprinkle with cheese. Bake 8 minutes or until cheese is melted.
