Deep Chocolate Sour Cream Pound Cake
MAKES ONE 10-INCH CAKE

2 1/4 cups self-rising cake flour
3/4 cup unsweetened cocoa
3/4 teaspoon baking soda
2 sticks ( 1/2 pound) unsalted butter, softened
2 cups sugar
3 large eggs
1 teaspoon pure vanilla extract
1 cup sour cream
2 ounces bittersweet or semisweet chocolate, cut into 1/4 -inch pieces
1/2 cup water

Preheat the oven to 325°. Lightly butter a 10-inch loaf pan and line the bottom with parchment or wax paper; butter the paper.
In a medium bowl, whisk together the flour, cocoa and baking soda. In a large bowl, using an electric mixer, beat the butter with 1 cup of the sugar at medium speed until blended. Add the eggs, 1 at a time, beating well after each addition. Add the vanilla. On low speed, alternately beat in the sour cream and the dry ingredients in 3 batches. Add the chocolate pieces and beat just until combined. Scrape the batter into the prepared pan and bake for about 1 hour and 10 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs attached. Let the cake cool on a rack for 15 minutes, then unmold and let cool right side up.
In a small saucepan, combine the remaining 1 cup of sugar with the water and simmer for 5 minutes, stirring to dissolve the sugar. Brush a thin layer of the glaze over the cake and let set. Brush the cake with the glaze 2 more times, allowing it to dry between glazings.

MAKE AHEAD The cake can be wrapped well and kept at room temperature for 1 day.

1 box Betty Crocker? SuperMoist? yellow cake mix
1/3 cup vegetable oil
1/4 cup water
1 teaspoon rum extract
1 can (8 oz) crushed pineapple in juice, undrained
3 eggs
1 teaspoon coconut extract
1 teaspoon rum extract
1 container (12 oz) Betty Crocker? Whipped vanilla frosting
3/4 cup shredded coconut


1. Heat oven to 375°F (350°F for dark or nonstick pan). Place paper baking cup in each of 24 regular-size muffin cups. In large bowl, beat cake mix, oil, water, 1 teaspoon rum extract, the pineapple and eggs with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Divide batter evenly among muffin cups.

2. Bake 14 to 19 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 30 minutes.

3. Stir coconut extract and 1 teaspoon rum extract into frosting. Spread frosting on cupcakes. Dip tops of frosted cupcakes in coconut. Store loosely covered at room temperature.

Make 30 cupcakes.

Oatmeal Peanut Butter and Chocolate Chip Cookies
Yields: 18 servings
INGREDIENTS:
3/4 cup butter
1/2 cup white sugar
1 cup packed brown sugar
2 eggs
1/2 cup peanut butter
1/4 cup water
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
2 cups rolled oats
1 cup semisweet chocolate mini-chips

DIRECTIONS:
1. Preheat oven to 350 degrees F.
2. In a medium bowl, cream together the butter, brown sugar and white sugar. Beat in the eggs one at a time, then stir in the peanut butter, water and vanilla. Combine the flour and baking soda, stir into the creamed mixture. Finally, stir in the rolled oats and chocolate chips. Drop by teaspoonfuls onto an unprepared cookie sheet.
3. Bake for 8 to 10 minutes in the preheated oven, until the cookies are lightly toasted on the edges. Remove from the baking sheet to cool on wire racks.

ROOT BEER FLOAT CAKE

1 white cake mix
2 eggs
2 cans root beer
1 lb root beer hard candies Crushed fine
1 box dry whip cream {like dream whip
mix cake, eggs, 1cup candies and 1 can root beer bake as directed, while cooling mix whip cream as directed on box but use root beer instead of milk, add remaining candies. Frost cake with cream. They taste just like a root beer float.
These make good cupcakes too.
You can use orange soda instead of the root beer and they taste like the Dreamscycles.

Gooey Cake
1 yellow cake mix
2 eggs
1 stick melted butter
mix together and press into glass bake pan
1 8oz bar cream cheese {softened
2 eggs
3-1/2 cups powdered sugar
mix together and spread over cake. Bake at 350 for 35 to 40 minutes or until golden brown and side of cake pull away from pan.

Easy Cheesecake

3 cups graham cracker crumbs
1 stick melted butter
1/2 cup sugar
mix together and press in glass pan
1 8oz bar cream cheese {softened
1 cup powdered sugar
2 large tubs whip cream
mix well and spread over crust. Top with favorite pie filling. Chill
