Pumpkin Cheesecake
1 1/4 cup pecan finely chopped
1/4 cup dry bread crumbs fine
2 Tbs sugar
2 Tbs butter, melted
2 lbs cream cheese, softened
1 cup brown sugar, packed
2/3 cup sugar
5 lg. eggs
1/4 cup flour, all-purpose
2 tsp pumpkin pie spice
16 oz pumpkin, canned
Preheat oven to 350°. In bowl combine pecans, bread crumbs, 2 tablespoons sugar. Drizzle melted butter over pecan mixture, toss to combine and press into bottom and up sides of buttered 9-inch springform pan, refrigerate. In a large bowl beat cream cheese until fluffy. Gradually beat in brown sugar and sugar until smooth. Add eggs, one at a time, beating well after each addition. In a small bowl combine flour, spice and pumpkin, mix well. Gradually add to cream cheese mixture; beat until smooth. Pour into greased crust. Bake at 350° for 80 to 90 minutes, or until center is set. Turn oven off, let cake stand in oven with door open 8-inch for 30 minutes, remove from oven and cool to room temperature on wire rack, chill overnight.

Pumpkin Cookies
1/2 cup shortening
1 cup white sugar
1 cup pumpkin puree
1 tsp vanilla extract
2 cups all-purpose flour
1/4 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1 1/2 cups butterscotch chips
1 Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2 In a medium bowl, cream the shortening and sugar. Stir in the pumpkin and vanilla. Sift together the flour, salt, baking soda, baking powder, and cinnamon; stir into the creamed mixture. Then mix in the butterscotch chips. Drop dough by teaspoonfuls onto the prepared cookie sheets.
3 Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool for a minute on cookie sheets before transferring to wire cooling racks.
Yield: 3 dozen.
Pumpkin Fudge
3 cups white sugar
1 cup milk
3 Tbs light corn syrup
1/2 cup pumpkin puree
1/4 tsp salt 1 teaspoon pumpkin pie spice
1 1/2 tsp vanilla extract
1/2 cup butter
1/2 cup chopped walnuts (optional)
1 Butter or grease one 8x8 inch pan.
2 In a 3 quart saucepan, mix together sugar, milk, corn syrup, pumpkin and salt. Bring to a boil over high heat, stirring constantly. Reduce heat to medium and continue boiling. Do not stir.
3 When mixture registers 232 degrees F (110 degrees C) on candy thermometer, or forms a soft ball when dropped into cold water, remove pan from heat. Stir in pumpkin pie spice, vanilla, butter and nuts. Cool to lukewarm (110 degrees F or 43 degrees C on candy thermometer).
4 Beat mixture until it is very thick and loses some of its gloss. Quickly pour into a greased eight-inch pan. When firm cut into 36 squares.

Pumpkin Crunch Cake
1 (15 ounce) can pumpkin puree
1 (12 fluid ounce) can evaporated milk
4 eggs
1 1/2 cups white sugar
2 tsp pumpkin pie spice
1 tsp salt
1 (18.25 ounce) package yellow cake mix
1 cup chopped pecans
1 cup margarine, melted
1 (8 ounce) container frozen whipped topping, thawed
1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch baking pan.
2 In a large bowl, combine pumpkin, evaporated milk, eggs, sugar, pumpkin pie spice, and salt. Mix well, and spread into the prepared pan.
3 Sprinkle cake mix over the top of the pumpkin mixture, and pat down. Sprinkle chopped pecans evenly over the cake mix, then drizzle with melted margarine.
4 Bake for 60 to 80 minutes, or until done. Top with whipped topping when ready to serve.
Yield: 1 - 9x13 inch cake.
Downeast Maine Pumpkin Bread
1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups all-purpose flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp ground cloves
1/4 tsp ground ginger
1 Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3 inch loaf pans.
2 In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.
3 Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.

Easy Pumpkin Ice Cream
1 quart Softened vanilla ice cream
1/2 cup Pumpkin pie mix
In large mixing bowl, combine ice cream and pumpkin pie mix; stir wuntil well blended. Pour into ice cream maker. Freeze following manufacturer's instructions. Top with your choice of toppings: mini chocolate chips, crushed toffee candy, chopped nuts, chocolate covered raisins, corn candies, or chocolate and orange jimmies. To make in home freezer, freeze mixture 2 hours. Beat with mixer or in food processor. Freeze an additional 2 hours or until firm.

Boil until soft (about 10 mins), drain, mash and add butter and maybe a little milk, like you would to make creamed potatoes. It tastes good.
fry some fish. saute onions,celery and wutever else you like then add finely chopped pumpkin and some water and let it cook. chop the fried fish and add it also. A tiny bit of sugar, salt and pepper and tada yum-o....or atleast i think that's how you make it...I saw my mom do it once.

makes really nice soup
Pumpkin bread or pumpkin chocolate chip cookies (mmmm really good). I also use canned pumpkin to replace the oil in a chocolate cake. It makes it low fat and it taste really good.
You can make a really tasty soup with it.
MAKE SOUP
First saute' minced onion, carrots, and celery in butter, then add peeled, cut up pumpkin, chicken or vegetable stock and boil until pumpkin is very tender. Puree in blender in batches, return to pot. At this point you may add a dash of nutmeg, a bit of sweetener of your choice(honey, white or brown sugar) and some heavy cream. Very Delicious.
