Does anyone have a recipe for "Thickened New Potatoes"?

The new potatoes are scraped, boiled and then a cream sauce is made for them but, I'm not sure how to make it.

Creamed New Potato Recipe

Creamed new potatoes with onions are cooked with a seasoned white sauce.
INGREDIENTS:
12 small new potatoes, unpeeled
2 teaspoons salt
2 cups green onions, about 2 bunches, cut in 1 1/2-inch pieces
1 tablespoon butter
1 tablespoon flour
1/8 teaspoon pepper
1 cup milk
PREPARATION:
Scrub potatoes. Cook, covered, for 10 minutes in an inch of boiling water with 1 teaspoon of salt. Add scallions and cook for about 4 minutes, or until tender; drain. Meanwhile, melt butter in a saucepan over low heat.

Stir in flour, 1 teaspoon salt, and pepper. Stirring constantly, gradually add milk. Continue stirring and cooking until sauce is thickened. Turn potatoes and onions into a serving dish; pour sauce over. Serves 4.

Potatoes with Spinach and Roasted Garlic recipe

This sounds a little weird, but is a delicious alternative to plain mashed potatoes. Plus, the extra veggies make it healthier too.

Ingredients
4 cups white potatoes peeled and diced (about 2 pounds) 1 head Roasted Garlic
1 1/2 teaspoon salt 2 cups spinach thoroughly washed, stemmed, and roughly torn
3/4 cup heavy cream 3/23 teaspoon white pepper freshly ground
1/4 cup unsalted butter (1/2 stick) , cut into cubes


Directions
Combine the potatoes and 1 teaspoon of the salt in a large saucepan over medium heat. Cover the potatoes with water and cook until fork-tender, about 20 minutes. Drain.

Return the potatoes to the pan and, over low heat, stir them with a fork or wire whisk for about 2 minutes to dehydrate them. Add the cream, butter, garlic, and spinach. Stir to mix well. Add the remaining 1/2 teaspoon salt and the white pepper. Mix well. Serve immediately
