My favorite Food. Salmon with Brown Rice and Streamed Veggies.

So many things. A nice salad was suggested. I've also had it with angelhair pasta (I use whole wheat pasta) with olive oil, crushed fresh garlic, salt & pepper, some herbs and add some steamed broccoli to that. Sprinkle with a good parmesan or romano cheese.

Spinach salad with oil and vinegar dressing and crumbled bleu cheese and walnuts. And a nice cabernet sauvignon. Or a pinot noir, if the salmon is cooked lightly.

Well when I eat salmon, I put lemon juice on top of it. And I also have a side dish of white rice.

Mushroom fried rice, broccoli, salad and garlic toast.

This isn't really a side dish, but it's sooooo good I have to share.

Chop 2 large tomatoes, shallot, 2 or 3 cloves of garlic and a handful of cilantro. Mix all these ingredients with salt, fresh pepper, juice of one or 2 lemons and good olive oil. Pour mixture over salmon fillets in a baking dish and bake at 350 for 15 min. or so.

As far as side dishes, as many others already said, my favorite is wild rice and asparagus.

I love roasted asparagus and a rice pilaf. Take the asparagus, trim them normally and then spritz lemon juice and some freshly minced garlic on them. Put them in a preheated 400 degree oven for about 10 minutes. Check them about halfway through to make sure they're not getting too dark (you want them a bit brown, but not black) on top. If they're getting too dark, simply turn them over. This type of cooking gives them a terrific nutty flavor that only comes out with roasting. Have a good dinner!

Garlic Parmesean Cheese Grits:

sautee in olive oil;
diced onion
minced garlic

add chicken broth, bring to a boil, add grits, cook until done

remove from heat and stir in parmesean cheese; adjust seasonings, add salt and pepper and serve.

New little potatoes with parsley and peas with pearl onions

Don't forget the Double Fudge Chunk ice cream for dessert!

Hot horse Radish Sauce is the best condiment to go with Salmon. New Boiled potatoes with butter and salt and pepper
and a nice green vegetable not over cooked.

A nice rice pilaf.

1 onion, chopped
Mushrooms (fresh or canned) chopped
Olive oil
3/4 C. Rice
1 can chicken or veggie broth (low sodium)
2 bay leaves

Saute the onion and mushrooms in olive oil until the onion is translucent. Add the rice and saute for a few minutes, stirring frequently. Add the broth and bay leaves, bring to a boil, cover, reduce heat, cook for 20 minutes. Remove bay leaves before serving.
