Chicken in a smoker???
I tried smoking my chicken legs and thighs in a smoker today, I had them in there for about 3 1/2 hours, they taste great, meat is nice and tender, but the skin is really tough....does anyone know how I would go about keeping the skin tender?

throw it in the smoker for an hour and a half so it gets nicely smoked then finish cooking it in the oven. If you cook it fully in the smoker it will dehydrate slowly which is why the skin is tough, if you leave it in there any longer it will be candied chicken (kind of like chicken jerky)
try basteing it with a marinade :)
always rub your chickys with cooking oil,pam,or barbecue sauce-baste baste baste! Good luck!
We have a smoker and to my knowledge the skin is not edible once it's smoked! But it's worth it, b/c the meat is so incredibly yummy! Try a turkey breast and make turkey salad with it and serve it on croissants! mmmmm........that is awesome!
