In food manufacturing, traceability means to be able to follow a product forward to a consumer or backward to the producer of all of that product's ingredients.
For example, say that you ate spaghetti sauce and got sick. You contact the manufacturer. They maintain records of where each code of product is sent. Then they research the code and find out what plant made it and what line and what kitchen, then they review records. The batch records show what lot codes of ingredients were used. They can then contact the source of the ingredients and the tracing continues. If all systems work, they can follow all the way back to the farms.

Traceability means the feasibility to trace the product details like the date of manufacture , the batch of manufacture, ingredients batch, etc from the product packing so that if there is any problem reported in a product it can be studied & traced back to the manufacturing details so as to find out the root cause.
It is so that if a beast has foot and mouth disease the authorities can quickly check back to where it came from and what other beasts it has come into contact with.
