Macaroni and Tomatoes:

15 min 5 min prep
4-6 servings

3 cups elbow macaroni
1 (14 ounce) can whole tomatoes
1-2 tablespoon Lawry's Seasoned Salt
1/4 cup margarine or butter

1. While macaroni is cooking according to package directions, I cut the tomatoes in smaller pieces.
2. Drain macaroni and put back into pot cooked in, add butter and Lawrey's Seasoning Salt (no substitutions).
3. Stir to coat.
4. Add tomatoes along with the juice.
5. You could also add crisp bacon pieces when served.

This is a very simple,delicious, & healthy recipe. You can substitute with any pasta of choice.

Pasta Puttanesca
8 ounces whole-wheat thin spaghetti, vermicelli or angel hair
1 tablespoon extra-virgin olive oil
2 cloves garlic, minced
1/3 cup chopped flat-leaf parsley
1/4 cup pitted chopped Spanish or Greek olives
2 tablespoons capers
1 teaspoon anchovy paste
1 tablespoon fresh oregano leaves or 1 teaspoon dried
1/8 teaspoon crushed red pepper flakes
1 (14-ounce) can diced tomatoes, preferably "no salt added"
3/4 cup chopped fresh arugula
1/4 cup grated Parmesan

Bring a large pot of water to a boil, add pasta and cook according to the directions on the package.
While the pasta is cooking, heat the oil in a large skillet over a medium flame. Add the garlic and saute until fragrant, about 1 minute. Add the parsley, olives, capers, anchovy paste, oregano and crushed red pepper to the skillet, and saute for 2 minutes more. Add the tomatoes and simmer for about 5 minutes. Stir in the arugula and simmer for 1 minute more, until the greens wilt slightly.

When the pasta is done, drain it and add it to the skillet, tossing it with the sauce to combine. Top with grated cheese.

Casserole with Cheese

Macaroni and tomato casserole is made with bell peppers, bacon, macaroni, shredded cheese, tomatoes, and tomato sauce.
INGREDIENTS:
1 green bell pepper, diced
4 slices bacon
8 ounces elbow macaroni
salt
2 tablespoons flour
1 large can (15 ounces) tomato sauce
1 1/2 cups shredded Cheddar cheese
salt and pepper
2 tomatoes, sliced
sugar, optional
dried leaf basil
PREPARATION:
Cook macaroni in boiling salted water, following package directions. Drain and rinse with cold water.
Cook bacon until crisp. Remove bacon; set aside. Leave 2 tablespoons of bacon drippings in skillet, or add butter to make 2 tablespoons of fat.

Sauté green bell pepper in the fat for about 2 minutes. Stir in flour. Gradually add the tomato sauce; cook, stirring, until thickened. Add 1 cups of the shredded cheese. Crumble the bacon and add to mixture. Season with salt and pepper to taste. In a buttered 2-quart casserole, layer half of the macaroni, half of the thickened sauce, then remaining macaroni and sauce. Arrange tomato slices on top of the casserole. Sprinkle the tomatoes with dried leaf basil, sugar, salt, and pepper. Top with remaining cheese. Bake at 350° for about 50 to 60 minutes.
Serves 4 to 6.
