Question:

Does any one have a recipe for Chicken Modiga?

I am searching for a recipe to Chicken Modiga. I was able to find one but it did not seem to have all the ingredients the one I tried had. I am looking for the recipe from Bill Gianino's from Saint Louis, MO. I tried searching from various search engines but none comes up with any luck. thanks

Answers:
CHICKEN MODIGA

4 boneless/skinless chicken breasts
Italian bread crumbs
3/4 cup butter
3 Tbsp. flour
1 1/2 cup chicken stock
3/4 cup sliced mushrooms
juice of 1/2 lemon
1/2 cup dry white or blush wine
8 oz. shredded provolone cheese

Cut each chicken breast into 3 strips. Wet with water and dredge in the bread crumbs.

Bake at 350 degrees for 20-30 minutes or until done; set aside.

Melt butter in large skillet. Mix flour in melted butter. Add chicken stock and stir until thickened.

Add wine, lemon juice, and mushrooms. Simmer for 5 minutes.

Lay chicken breast pieces in the chicken stock mixture. Cover with the provolone cheese and cover pan. Simmer until cheese is melted.

Serve over wild rice.

Not from the restaurant you were looking for but maybe this comes close.
