What are good and easy weekly recipes?
Answers:
Weekly recipes? I am assuming you want to use similar ingredients and make them taste good throughout the week.
If I have a really busy week coming up I generally buy a large pack of chicken breast for my family of 3 (husband and 5 year old daughter). I season all the chicken very differently, since we all like different food. I wrap the chicken in dinner size portions, generally two chicken breast, my husban eats one and my daughter and I split one, in foil paper.
In one pouch I marinate the chicken in italian dressing, in another I season it with Mexican flavours (chili powder, cumin and olive oil, but you could just use a pack mix), and another in Asian flavours. Bake them all at 400 for about 25 minutes. You can leave them in your packages until they are ready to eat. You don't have to go in this particular order, but this is the type of thing I might do.
Sunday - buy some type of beef for dinner, generally I like to do one that I will have leftovers, roast beef or pot roast. Sometimes I will broil or grill some ribeyes though. I serve this with mashed potatoes & green beans (just because it's my daughters favorite). Whatever I make I just make sure I have leftovers.
Monday - Asian Chicken. I just sautee this with thin spagetti, soy sauce, sesame oil and julienned veggies from the salad bar at the supermarket. It's like Lo Mein. I also have a little secret that makes it more authentic that sounds nasty, but its pretty good. Before you put the pasta and veggies in the pan to sautee I mix about 1/2 cup of chicken stock, a dash of hot sauce and 1 tsp. of corn starch and mix it. Let it come to a boil. Then I mix everything in and let it cook up. I have made this without doing this in a rush, but it's better if you do this first. If my daughter is not home I make a Asian chicken salad. I use a sesame dressing and mix it with crispy Asian noodles, almonds, and mandarin oranges. I must admit I like this better.
Tuesday - Mexican Chicken. You can make any Mexican dish with this. Tacos, burritos, encheladas, empanadas, taco salad, quesadillas, nachos, the list is endless. It's not my daughters favorite, so if I make this she gets a piece of chicken with ketchup on it and leftover sides, buy my husband and I love taco pie. The flavored chicken shredded, a can of mexi-corn (I am sure regular corn would be fine as well), a large jar of salsa (homemade doesn't really work, believe me I tried), a bag of soft tortillas, a large bag of mexican flavored cheese, and a can of refried beans. Layer all of these starting with the salsa and then tortilla in a pie pan like lasagna. End with salsa and the last 10 minutes top with a little more cheese and pop it back in the oven. Bake at 350 for about 40 minutes. Serve it with sour cream. We love this!
Wednesday - Reheat your beef dinner.
Thursday - Italian chicken. Again you can do anything with this. This is a really easy one to go over with my daughter. Top with marinara and mozz cheese for a no fry chicken parm and serve with pasta and salad. I have also served it just as chicken breast, with penne in equal amounts of olive oil and butter, a clove or two of garlic, salt, pepper and grated parm with a side of green beans. You could also just toss this with fresh pasta, cream, parm and veggies in a sautee pan. YUM!
Thursday - We have gymnastics this night so when we get home we generally will do a frozen pizza. I like Mystic Pizza because it has no preservatives in it. I serve this with a salad.
Friday - generally we will just eat all the leftovers, sandwiches, etc. We don't have a set time for dinner on Fridays whenever someone is hungry we just heat up some food.
Saturday - We generally eat out on Saturday.
My one key thing would be to reheat the chicken in the oven. Chicken in the mic tastes a little funny.

Also, one of my favorites:
Steak Casserole
Steak (any cut will do even stew meat)
Brown all over and put in bottom of roast pan.
Add as you like:
6-8 Carrots , whole and peeled
8 Potatoes (Or - omit and serve with buttered boodles cooked separately)
2 stalks Celery, chopped
2 Onions, sliced
Turnip , diced
1 can cream of mushroom soup
1 can cream of celery
(tomato soup and cream of chicken is good too)
1 to ? cans water.
Cover and bake at 350 for 1 ? hours.
You can do a zillion things with boneless/skinless chicken breast.
Grill with BBQ sauce, you can even do that in a skillet on your stove top. Serve with baked taters and steamed broccoli.
Saute them up with olive oil and garlic, serve over pasta or rice. You can do this while still whole or cut into bite size pieces and add mushrooms and veggies.
Bread them and fry them up in some peanut oil
Cut into strips and cook up in fajita seasoning mix, you can also add diced peppers and onions and serve on warm tortillas with sour cream and sauce with some rice.
I make this kielbasa my boyfriend loves it and it's so simple to make . Cut kielbasa in 1/2 inch thick pieces and boil in ginger ale for about 5 minutes. Kielbasa should be fully sum-merged in the ginger ale (depends on how much meat you have) Drain Kielbasa and put on a cookie sheet. Sprinkle brown sugar over hole pan and put in the broiler so the brown sugar crystallizes. Serve with Honey mustard for dipping sauce with your favorite side dishes. It is so good and defiantly kid friendly too!!

add garlic, salt pepper, and hot peppers that you like...
add chicken.....then rice....cook through til warmed.

good meal if you have leftovers
Cheese lasagna. Use the no-boil noodles. Takes 5 minutes to prepare and 30 minutes to cook. Then I throw together a bagged caesar salad to go with it. If I want meat, I will microwave frozen meatballs, but I always feel that the cheese is sufficient protein.
Chicken Quesadillas - I use perdue oven roasted chicken breast. Just heat it for 5 minutes in the nuke. Place flour tortillas on cookie sheet. Put on chicken. Sprinkle cheddar cheese. Bake in oven til cheese is melted and tortillas are crispy. Use pizza cutter to cut. Dip in sour cream and salsa.
Easy as pie, and my kids love it. Healthier than taco bell too cause no added fat or frying!

A favorite here is chicken pizza. buy the crusts already made, cook the chicken in the slow cooker so it is ready when dinner time comes. Dice the chicken breast [about 3 for two pizzas] dice onions, black olives, shredded cheese [whatever type you like] sliced tomatoes and spread ragu on the crusts. Put on as much of each ingredient that you like and bake for 15 minutes. It tastes great.
We also like spaghetti and homemade meatballs Meatballs are easy to make.
I am making this today... it is really easy and yummy...
Easy Vegetable Beef Soup
1 lb ground beef
14 1/2 ounces beef broth
16 ounces frozen vegetables (I used a corn, bean, carrot blend)
14 1/2 ounces diced tomatoes
10 3/4 ounces condensed tomato soup
1 tablespoon minced onions
1 teaspoon italian seasoning
1/4 teaspoon garlic powder
1 1/4 cups water
1. In skillet, brown beef and drain off fat. Place beef in 3-4 quart crockpot.
2. Add remaining ingredients. I I would add the vegies about half way through or they might get over cooked)
3. Cover and cook on low for 7-8 hours or high for 3 1/2 to 4 hours.
* If you don't have a crock pot, it could just as easily be done on the stove... let it simmer for about an hour..
