Believe it or not, you can find a recipe for stuffed manicotti on the box of manicotti pasta...lol...you can also type it in a search and a lot of recipes will come up for it. Good luck!

As far as the sauce goes, you can use any type of jar sauce-make sure it's (2) 16 oz sized jars.
2 cups spaghetti sauce, divided
1 egg, lightly beaten
1-3/4 cups POLLY-O Original Ricotta Cheese
1-1/2 cups KRAFT Shredded Mozzarella Cheese
1/2 cup KRAFT 100% Grated Parmesan Cheese
1/4 cup pesto
12 manicotti shells, cooked, rinsed in cold water
PREHEAT oven to 350°F. Spread 3/4 cup of the spaghetti sauce on bottom of 13x9-inch baking dish. Mix egg, cheeses and pesto until well blended. Spoon cheese mixture into large resealable plastic bag. Using scissors, cut off small hole from one of the bottom corners of bag.
FILL manicotti shells, one at a time, squeezing cheese mixture into both sides of each shell. Place manicotti over sauce in baking dish; pour remaining 1-1/4 cups spaghetti sauce over manicotti. Cover with foil.
BAKE 40 min. or until heated through.

You can make it the easy way with store boyght sauce, noodles and cheese. Boil manicotti noodles ( or use giant shell noodles it all comes out the same). Drrain the noodles and fill them with ricotta cheese, either plane or seasoned with parsley and basil. place these in a baking pan and poor spaghetti sauce over everything, top with a mozzerella/parmesean cheese mixture and bake at 350 f until the stuffed man. is hot and the cheese is the topping cheese is melted (ricotta doesn't really melt).

This recipe for Cheese-Stuffed Manicotti serves/makes 6
1/2 pound Fresh mozzarella cheese cut in 1/2-inch dice
2 pounds Ricotta cheese
1/4 pound Prosciutto --1/4-inch dice
2 Eggs
1/2 cup Freshly grated Parmesan
Cheese
Salt and freshly ground
Black pepper
1/4 cup Minced fresh parsley
14 Manicotti shells
3 cups Tomato sauce --(Meat or Marinara)
1/2 cup Freshly grated Parmesan Cheese
Directions:
To make the filling: combine all the filling ingredients.
Heat 4 to 6 quarts of salted water to the boil in a pot mix very thoroughly. add 2 tablespoons oil to help prevent pasta from sticking. Add half of the manicotti and cook for 6 to 8 minutes, or until not quite al dente. Stir occasionally with a long-handled fork. Hold a strainer over the pot and use a slotted spoon to remove 1 or 2 manicotti at a time from the boiling water, placing them in the strainer. Shake manicotti free of water over the pot. Spread a clean kitchen towel on the kitchen counter. Place the manicotti side by side on the towel, which will absorb all the remaining moisture. (The shells must be completely dry before stuffing.) Repeat until all shells are cooked. Cool.
Generously butter a baking dish, 13 x 10 inches. Fill each shell with some of the stuffing, letting a little of the stuffing come out on either end. This is best done with a pastry tube and a large nozzle; otherwise use a regular teaspoon. Lay the stuffed manicotti side by side in the buttered dish and surround them with any manicotti shells you may not have sufficient stuffing for. Pour half the tomato sauce over the shells and sprinkle with 1/2 cup Parmesan cheese. Bake in a preheated moderate oven for 15 to 20 minutes. Heat remaining tomato sauce to serve separately. Serve with additional Parmesan Cheese.

1/4 cup olive oil
1 pound ground beef
1/2 cup minced onion
1 clove garlic, minced
1 (32 oz.) can tomatoes, cut up
1 (6 oz.) can tomato paste
2 teaspoons salt
2 teaspoons brown sugar
1 teaspoon basil leaves
1 teaspoon oregano leaves
1 teaspoon dried parsley
1/4 teaspoon pepper
***Filling***
3/4 pound ground beef
4 tablespoons minced green onion
1 teaspoon salt
1/4 teaspoon pepper
1 pound ricotta cheese
2 cups grated Mozzarella cheese
1 egg, beaten
1 teaspoon dried parsley
1 (8 oz.) pkg. Manicotti
Directions:
Sauce: Heat oil in large skillet, cook ground beef, onion and garlic. Drain excess fat. Add tomatoes, paste and seasonings. Simmer 45 minutes.
Filling: Cook ground beef, green onion, salt and pepper. Drain and cool. Combine ricotta, mozzarella, egg, parsley and cooled beef.
Prepare Manicotti according to package directions. Drain. Fill tubes with 1/4 cup filling. Pour 1/3 the sauce into a 9x13-inch baking dish; place tubes seam side down in single layer. Cover with remaining sauce and sprinkle with Parmesan. Bake covered in a 350 degree oven 30-40 minutes.

Spinach Manicotti Recipe
Stuffed manicotti with spinach and ricotta and Parmesan cheese with a little nutmeg and tomato sauce.
INGREDIENTS:
10 manicotti shells
2 cans (6 ounces each) tomato paste
3 cups water
1/2 cup finely chopped onion
2 cloves garlic crushed
1/2 teaspoon dried leaf basil, crumbled
1/2 teaspoon dried leaf oregano, crumbled
1/4 teaspoon salt
1/4 teaspoon pepper
2 packages (10 ounces each) frozen chopped spinach
16 ounces ricotta cheese
1/3 cup grated Parmesan cheese
1/4 teaspoon ground nutmeg
pepper to taste
PREPARATION:
Cook manicotti shells according to package directions; drain and set aside.
In a large saucepan, combine tomato paste, water, onion, garlic, basil, oregano, salt, and pepper. Cover and cook over low heat for 1 hour.
Cook spinach according to package directions
Drain well, squeezing and using paper towels to get out as much moisture as possible. In a mixing bowl, combine spinach with ricotta cheese, Parmesan cheese, and nutmeg; add pepper to taste. Stuff manicotti shells with spinach mixer. Arrange stuffed manicotti in a greased 13x9x2-inch baking dish. Pour tomato sauce over the manicotti. Bake at 350° for 45 minutes.

I would really recommend buying the manicotti shells, then using the company's recipe they put on the back of the box. I am not trying to be sarcastic....those companies want you to keep buying their products, and if you LOVE making it the way they recommend, they know you'll be back to buy more later.
I can give you a recipe for stuffed shells, which I believe is identical (I got it off the shells box!)
1 jar marinara sauce.
1 pound ricotta cheese
8oz mozzerella cheese
1 cup parmesean cheese
1 egg
1T dry basil
About 18 manicotti shells, boiled and rinsed in cold water.
Mix all the cheeses egg and basil together.
Stuff into shells. Pour sauce over top and cook 45 minutes at 350 degrees.
