How can I make my muffin tops hard and crusty like the bakery?


Answers:
Brush the tops with a mixture of heavy cream and sugar.

ask the people who work @ the bakery

try sprinkling raw sugar on the top.....
or make a oatmeal, flour, butter kinda' strudel and top them about five minutes before you are to take them out of the oven!

I always had a gas stove. Now that I have an electric, baked goods turn out much better. Most restaurants use convection ovens for baking.

You can get a pan that just makes the tops - they usually come out crustier than regular muffins:

after baking broil top and botton aprox 5 minutes.
