Our friends have a big hog roast party every memorial weekend. The supply the meat and everyone brings side dishes to share with the crowd.
I was something GOOD but different to take this year. There is always a lot of desserts, so I prefer an actual side dish. I need something that is quick, easy, and will serve a lot of people!!

My Family has a pig roast almost every year and the following are the favorites- easy, yummy, and portable!
Rice and Bean salad
4 cups cooked rice
2 cans black beans, drained and rinsed
1 can whole kernal corn, drained
1 cup mild salsa
3/4 cup mayo
chopped cilantro
Mix all ingredients and chill for a couple hours to meld flavors. Easily doubled- and you can change up the salsa type, use red beans instead of black, use parsley instead of cilantro, etc.
Triple Corn Bread
1 box krusteez honey cord bread mix
1 can whole kernal corn
1 can cream style corn
1 cup sour cream
2 eggs
2 tablespoons honey
Ignore the package directions and stir the above ingredients together. Cook in a large aluminum foil square cake pan for 25 minutes, pat with butter and cook 5 minutes more.
i love italian pasta salad made with rotini and italian dressing. add mushrooms, pepperoni, mozzerella, black olives, maybe cauliflower or broccoli if you like. really easy - and there's no wrong way to make it!
I would take a crock pot and make chili in it...everyone loves chili...just don't forget the cheese, onions and crackers
Why not take a side dish of several litters of piglets?
You know...a small appetizer before the hog meal....

baked beans is quick and easy to serve alot of people
My first thought was italian pasta salad but someon beat me to it, so now I have to go with hashbrown casserole. Bake hashbrowns, sourcream, cheddar cheese, and a little cream of mushroom soup in a big cake pan. When it is 10 minutes from done crush potato chips on top and pour about 3 tsp of melted butter on the top of the chipd for the salty addition to the potatoes and a wonderful crunch! YUM!
I have a great taco salad recipe.
1 head of lettuce chopped
1 12 oz. bag of shredded cheddar cheese
1lb cooked ground beef
onion to taste
1 large tomato cubed
1/2 cup sour cream
Catalina salad dressing(about 1 cup or whatever covers the salad)
Mix it all together then crumble 1 large bag of nacho cheese Doritos on top.
The catalina and doritos really makes it tasts different. Could also add olives or other taco ingredients.

A quick and easy dish I love is if you cut your potatoes in half and then cut the two pieces in half. Then take your four halfs and cut them into four (So, you have a bunch of little potatoes. Put then in a pan and put salt, pepper, and garlic salt over them. Cover with tin foil and put a little water in the bottom. Then turn your oven on 375 and let cook for 1 hour. Then when potatoes are soft put kraft sharp cheese grated on the top put in for 5-7 minutes and they are ready to eat!!

but my favorite suggestion is different and tasty my recipe may have to be doubled or etc to accomodate more people
cucumber salad
3 cucumbers
salt and pepper
1 tsp vinegar
1/2 cup mayo
1/4 cup sour cream
1 tbsp fresh dill
peel and slice cucumbers put them in glass bowl sprinkle with salt and pepper and vinegar cover and let stand for half and hour pour off excess liquid add the mayo sour cream and dill mix well cover and refrigerate til serving time!
Restaurant-Style Coleslaw I
1 (16 ounce) package coleslaw mix
2 tablespoons minced onion
1/3 cup white sugar
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 1/2 tablespoons white wine vinegar
2 1/2 tablespoons lemon juice
DIRECTIONS
Combine the coleslaw and onion in a large bowl.
In a separate bowl, combine the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar and lemon juice; mix until smooth. Pour mixture over the coleslaw and onion; stir well and chill for 1 hour.
And if you want to have allot add double the ingredients to everything
Garlic potatoes.
Slice potatoes in pieces, place in microwave safe dish, add garlic salt, chopped dried green onions, and butter. Microwave until potatoes are tender. I LOVE THIS!! All the measurements are general.

I took Cornbread Salad to a church picnic last year and it was a hit. here is the receipe: mix together and set aside1 cup mayo, 1/2 pkg. ranch dressing mix,1/2 cup bacon bits, 1 cup sour cream, 1 small onion(diced) , bake an 8x8 pan cornbread and crumble up and place 1/2 in bottom of deep bowl , place place 1/2 can pinto beans on top of bread and 1/2 can mexican corn on top of beans , then put 1/2 of the mixture of the first 5 ingred. on top and 1/2 a diced tomato, then make another layer like this , topping with shredded cheddar cheese. refrigerate, mix when ready to serve.
