Fast dinner ideas?

i have a very busy schedule during the day and whenever i get home of a night the last thing i want to do is fix a big meal, so i was needing some dinner ideas that are fast, yet still healthy. thanks! recipes would be wonderful!!


Answers:
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1-1/2 cups water
6 small boneless skinless chicken breast halves (1-1/2 lb.), 1/2 inch thick
4 cups broccoli florets
1-1/2 cups KRAFT Shredded Cheddar Cheese
1/4 cup OSCAR MAYER Real Bacon Bits
1/2 cup KRAFT Ranch Dressing

PREHEAT oven to 400°F. Combine stuffing mix and water; spoon evenly onto centers of six large sheets of heavy-duty foil. Top each with one chicken breast and 2/3 cup broccoli. Sprinkle evenly with cheese and bacon bits, then drizzle evenly with dressing.
BRING up foil sides. Double fold top and both ends to seal each packet, leaving room for heat circulation inside. Place foil packets in single layer in 15x10x1-inch baking pan.
BAKE 30 to 35 min. or until chicken is cooked through (170°F). Remove packets from oven; let stand 5 min. Place one packet on each of six dinner plates. Cut slits in foil with sharp knife to release steam before opening.

2 cups instant white rice, uncooked
2 cups warm water
1 lb. flounder fillets, cut in half crosswise
4 cups fresh spinach leaves, coarsely chopped
1/4 cup PHILADELPHIA Chive & Onion Cream Cheese Spread
1/2 cup KRAFT Sun-Dried Tomato Vinaigrette Dressing

PREHEAT oven to 375°F. Mix rice and water; spoon evenly onto center of each of 4 large sheets of heavy-duty aluminum foil. Top evenly with half of the fish. Cover with the spinach, cream cheese spread and remaining fish pieces. Drizzle each with 2 Tbsp. of the dressing.

Rice can be made ahead of time so all you have to do is micro to get in hot.So,stir fry either chicken or beef with some asian oyster sauce,throw in some chopped broccoli and carrots or just about any veggie over rice.You can also mix a tin of tomato sauce into the rice with sliced sausage and chicken-jambalaya.

but a tip: While your making something, put another thing to cook

oooh ooooh oooh I just made this!! It's my version of yakisoba:

Brown tofu/chicken whatever protein

Add vegetables (ie broccoli, chopped carrots, peas, peapods etc)

While this is cooking (on low!!) get a block or 2 (depending on how much you need to make) of ramen noodles (the cheap kind!) and parboil (that's fancy restaurant speak for cook mostly) while STILL IN THE BLOCK, ie don't break them up in the water. I find waving em for a minute and a half does the trick. Take the WHOLE BLOCK and put it in with the veggies/protein and stir it up really well. This is one of those situations where a wok comes in handy. Then add the seasoning or your own soy sauce-esque creation, stir and serve!! you might need to add water, but it's pretty easy to tell if you do.

Also, using aluminum foil and making bakeable packets is really easy and fast, use stuff like chicken with some herbs and zucchini, broccoli and carrots. Remember that raw chicken has lots of germs though so don't mix it with anything before it's cooked!!

Chicken Brocolli Rice
* 2 cups cooked rice
* frozen broccoli
* 1 can of chicken (like swanson)
* 1 can of cream soup
* Cubed Velvetta cheese

PREPARATION:
Mix all ingredients; bake 20 minutes or so at 350 degrees.
