I need an idea for something different for a picnic/BBQ????
I need something out of the ordinary for a picnic/BBQ besides the usual hot dog, hamburger, etc????? Any ideas? It is for a function that my boyfriends rugby team is hosting & I want to provide something unique & tasty!

i made classic potato salad once, but I used hot frozen fries and banana peppers... it was SOOO TASTY!!!
but it has to be served warm.... yummmm.....
Veggie or fruit kabobs (pineapple, peaches & other firm fruits grill up nicely!).
Picnic Recipe for MANDARIN SALAD WITH EGGS
Serves 4
1 head Boston lettuce
4 hard-cooked eggs
1 15-ounce can mandarin oranges, drained
1 8-ounce can pineapple pieces, drained
? cup walnuts, finely chopped and toasted
? cup lime juice
1 12-ounce jar strawberry jam
3 tablespoons vegetable oil
1 teaspoon garlic powder
1 teaspoon sugar
? teaspoon salt
? teaspoon cayenne red pepper
Separate lettuce leaves, wash and pat dry. Place evenly on 4 salad plates. Top each with one sliced hard-cooked egg, several mandarin orange sections and pineapple pieces. Sprinkle each salad with 1 tablespoon of the walnuts.
In a small bowl, blend together remaining 7 ingredients. Drizzle 2 tablespoons of dressing over each salad. Salads may be prepared one hour prior to serving and refrigerated.
how about stuffed turkey burgers or beef with cheddar and or tuna burgers or fried crab cake sandwiches
Deer meat is delicious. It might not go over to well with the guests, but you will enjoy it!
Lobster and shrimp, can't go wrong.
One of my favorites is grilled Pork Chops. I season it with adobe, sazon, sofrito and a little evoo (extra virgin olive oil). Comes out really tasty and juicy. You can try chicken kabobs with red, green and yellow peppers, grilled corn, ribs, steak. Just about anything tastes good grilled. Some people even grill fruit. Also try pico de gayo. This tastes really good with grilled food. You take tomatoes and slice them into cubes. Chop some onions and cilantro (not too much if you don't like it). Add a lot of lemon and salt to taste and there you have it. Trust me when I say you will love it. Don't forget the potato salad. I grill all summer and have a stove top grill that I use during off season. LOL HAVE FUN!!!
Marinade boneless, skinless chicken breasts in Italian dressing, cook them on the grill & serve them with different sauces on kaiser rolls or onion buns. Try horseradish mayo, ranch dressing, spicy mayo, different types of mustards. Also, use a different type of lettuce than iceberg. Put out plates of sliced red onion, tomatoes, cucumbers. Fix baked beans & dish them up hot out of a crock-pot. Make fresh spaghetti salad full of summer veggies. Or load up a platter with ham, turkey, roast beef & chicken, lay out all of the sandwich fixings & let them make their own monster sandwiches, buffet style.

Crab Tartlets - makes 22
INGREDIENTS
3 (2.1 ounce) packages frozen miniature phyllo tart shells
1/2 cup shredded Swiss cheese
2 eggs
1/3 cup mayonnaise
1/4 cup half-and-half cream
1 green onion, finely chopped
1/4 teaspoon salt
1/4 teaspoon ground mustard
1/8 teaspoon pepper
1 (6 ounce) can crabmeat - drained, flaked and cartilage removed
DIRECTIONS
Place tart shells on an ungreased baking sheet. Sprinkle Swiss cheese into each shell. In a mixing bowl, combine the remaining ingredients. Spoon a teaspoonful of crab mixture into each tart shell. Bake at 375 degrees F for 18-20 minutes or until pastry is browned. Serve warm.
Sausage Mushroom Appetizers
INGREDIENTS
48 large fresh mushrooms
2 eggs, lightly beaten
1 pound bulk pork sausage, cooked and crumbled
1 cup shredded Swiss cheese
1/4 cup mayonnaise
3 tablespoons butter or margarine, melted
2 tablespoons finely chopped onion
2 teaspoons spicy brown mustard or horseradish mustard
1 teaspoon garlic salt
1 teaspoon Cajun seasoning
1 teaspoon Worcestershire sauce
DIRECTIONS
Remove mushroom stems (discard or save for another use); set caps aside. In a large bowl, combine the remaining ingredients. Stuff into the mushroom caps. Place in two greased 13-in. x 9-in. x 2-in. baking dishes. Bake, uncovered, at 350 degrees F for 16-20 minutes or until heated through.
Chicken and Steak Kabobs and a nice rice pilaf with peas and carrots. I would leave burgers or hotdogs on the menu though for the diehards lol.

shrimp kabobs. cook them in foil to retain so they don't dry out. use Old Bay Seasoning

Try Hot Wings. I marinate mine in a bar-b-q type sauce and grill then I swish them in hot sauce. Great with a blue cheese dipping ( use salad dressing its easier) Also a great way to to serve some celery and carrots sticks with them. Grilled corn is also good. And maybe a Cole slaw.

I love to make buffalo chicken sandwiches and have lots of side dishes for people to choose from. Take boneless, skinless chicken breasts and trim off all fat and place in dish to marinate with Texas Pete Buffalo Wing Sauce. Marinate for up to 6 hours I would say but no more than that. Remove from marinade and cook on the grill until done. The smoke from the grill really goes well with the buffalo wing sauce. Have plenty of good rolls/buns and place chicken breast with grilled onions and slices of swiss cheese on the buns with extra sauce if they like. I like to serve mine with coleslaw, baked beans, macaroni or potato salad, and maybe a fruit salad. Then for dessert I would serve a cake and a banana pudding so there are two different choices for everyone. To drink, I would serve beer, wine, margaritas, and sweet tea. I hope you enjoy!
