I have mozarrela cheese, chicken breast whole and also little pieces. calamata olives, tomatoes...... i dont have to use all the ingredients, just examples... i also have the basics salt pepper and other spices.

brown your chicken in a frying pan. Take it out & put it in a cake pan pour thte tomato's over it pepper it garlic powder, onion powder, olives toss n the oven for 40 min at 350 degrees just before it is done put the cheese on it let it melt & there ya go

You could stuff the chicken with the cheese and olives. Once it's baked the cheese will melt and it will be delicious!
do you have pizza dough or some kind of roll? you can put the tomatoes, mozzarella cheese, and chicken on it! throw some spices on it too, to make it a little more interesting! my mom makes pizzas like that a lot and they are SO good
put the chicken in a plastic bag w. diced tomatoes. let it marinade then pan fry it. Put the cheese on top of the chicken and let it melt, then cover with left over diced tomatoes. Ghetto rigged Chicken Parmigian!
Chicken Parmesan. Make a tomato sauce with the tomatoes, spices and olives. Pan fry the chicken and serve over spaghetti or without. It's really good, and you wont have to buy anything

You could grill or pan sear the chicken breast then top with tomato slices, sliced olives, fresh mozzarella, salt pepper, balsamic vinegar (if you have it) and olive oil. Place in the broiler till the cheese is nice and melted and you have a delicious Italian treat!
Or you could dice up all those same ingredients and have a Italian chicken salad!

Chop your calamata olives and blend with chopped flat leafed parsley, chopped tomatos and shredded mozarella. Pound chicken breasts until they are about 1/2 inch thick and season with salt and pepper. Dip in egg wash and then roll in crushed corn flakes, crackers, or bread crumbs. Place in baking dish and dot with butter. Top with calamata olive blend. Bake at 350 degrees until golden brown and cheese is melted.
fry up the chicken in some olive oil, towards the end throw in the olives & tomaotes. Right before you are ready to take it off the stove stir in shredded mozz.. Serve over cooked linguni
You can do LOTS with the ingredients you mentioned ... I'd cook the chicken in a bit of 'butter' with some white wine (you can also use water, with a 'dash' of 'dark vinegar' if you have no wine, or just 'plain' ... then put it into a baking dish and put the sliced tomatoes and pieces of olive on top, cover with grated mozarella cheese, and 'bake' for about 10-15 minutes (if the chicken is hot) or for about an hour if it's 'cold' but COVER IT until the last five minutes if you are using 'cold chicken' to keep the cheese from getting to 'brown' and 'crusty.' I'd serve this with a good 'italian vinagrette' on a green salad ... you may leave the tomatoes 'out' but you should use some cucmber and 'baby greens' and serve the extra olives in a bowl on the side ... YUM. What starch would go well with that? You could make a nice 'long grain rice' with some 'saffron' to color it yellow orange and give it a 'hint' of flavor, or use a 'jasmine' or 'basmati' rice cooked with a bit of butter ... or you could just make 'garlic bread' with a hint of 'Italian seasoning' and a bit of grated parmesan on top.
How about some kind of stuffed italian chicken with an italian olive and tomato sauce.
Debone the chicken breast(s). Cut a pocket in the side. Stick the mozarella in the pocket. Dredge in egg and cracker crumbs (or skip this step if you're on a diet - but if you do, be sure to cover them when you bake them or they'll get really dry). Bake. for times and heat, I would look up another stuffed chicken recipe.
then for the sauce, dice some onion; saute it in olive oil until soft. Add some canned tomatos (big can, probably). maybe throw in some red wine or a dash balsalmic vinegar? oregano and basil? then reduce it. After it's done, I would add the olives just long enough to heat through.
You could serve this over the chicken with a side of angel hair or fettucine pasta and either sauteed spinach or a green salad.
Or - is the mozarella fresh? If so, just dice the chicken, saute it and make it part of the pasta sauce.... use the mozarella separately to make a mozarella salad. Slice the fresh mozarella with slices of very very good tomato. top with a splash of balsalmic vinegar and olive oil. Season with a chiffonade of basil, good salt and a grind of pepper YUM. BTW, a secret to making the pretty basil - you wash the leaves, layer them on top of each other and roll them up toward the stem (so you have a pipe). then cut thin slices from the 'pipe' - the results are very pretty.
Bake the chicken with the olives, tomatoes etc. Top it with the cheese, and spice it up a little. It will turn out great.
