The Classic French Omelet
"a French omelet great for breakfast, lunch, or dinner!"
Items needed: For each omelet: 3 eggs (just 2 eggs for a smaller omelet), 1 tablespoon milk, 1/4 cup shredded cheese, butter.
Mix eggs & milk with a fork until blended. In a non-stick omelet pan melt 1 tablespoon butter over medium-high heat, when butter stops foaming pour in eggs, swirling around pan to distribute evenly. Cook, lifting sides of omelet to let uncooked egg flow underneath, until almost set (about 1 minute), quickly sprinkle cheese over half of omelet. Fold plain side of omelet over cheese and cook for an additional 20 seconds. Serve at once. Salt & pepper to taste.
***Do not salt eggs before or during cooking. Salt can cause the eggs to become tough tough during cooking, so for best results salt eggs (if desired) only after cooking.

1/2 tsp. baking powder
1/8 tsp. salt
dash pepper
1 1/2 cups milk
8 eggs
1 1/2 cup shredded cheddar or other cheese

Preheat oven to 350 degrees.
1. Mix the dry ingredients in a bowl. Add enough milk to make a paste and then add the remaining milk a little at time, stirring after each addition, until you have a smooth mixture. Add the eggs and cheese.
2. Grease a 9-inch pie pan with butter. Pour the omelet mixture into the pie pan and bake for 40-45 minutes or until the omelet starts to brown and a knife inserted in the center comes out clean.
Variations:
Add herbs, spices, sautéed vegetables, ham, or other meats or vegetables as desired to this recipe as you would for stovetop omelets.
Well, first off....Do you know how to make scrambled eggs? Thats what you do. You first crack 3 eggs into a bowl and mix it until all of it is yellow. Then you pour it onto a skilllet.....erm- thats all I really know..Its hard to explain. Just go check out a cook book in a libray,eh?

quite simple, crack two eggs in a bowl, whisk them for about a minute or 2 so that it is liquidy, put a couple pinches of salt in the egg mix. turn on stove, get a decent size pan put some butter, or margarine on the pan so it doesn't stick. cut up your favoirte topping, vegetables, or ham,baccon, etc... and put these in the pan first, mix them around like a stir fry for about a minute, then put eqq mix in. In about 2 minutes half the egg should be cooked, so with a spatula lift up one side and tilt the pan so the excess liquid egg goes underneath. When its all pretty much solid put on cheese if you wish, then fold over and let it cook til slightly brown, flip and make sure other side is cooked, and There you go you have your self an omelet.
If you feel real adventurous you can add salsa or hot sauce, or ketchup after.
whip 3 eggs together about a tablespoon of milk together

1st decide on what types of fillings you wish to have in an omelet... Such as potato, bell pepper, onion, bacon, ham, mushrooms, tomato, spinach,sausage, olives, and your choice of cheese.
1. Either cut, chop or shred your fillings. It's better to select and prepare your omelet fillings before cooking the eggs.
2. Spray a small pan with non-stick cooking spray, and add all your ingredients other than eggs and cheese. Cook on low heat. (*Meat should be pre cooked not just warmed) . Thoroughly cook these omelet ingredients before adding the eggs.
3. Break the eggs. Best to crack eggs one at a time into a bowl (keeps the bad ones from getting mixed iin.) After cracked throw the shells away.
4. Beat the eggs with a fork or wire whip. (I like to add a little touch of milk and pepper to my eggs while beating them, they tend to have a better taste afterwards). for a single serve omelet you can use between two and four eggs.
5. Use a good non-stick pan, spray lightly with non-stick spray. put pan on low to med heat and pour in eggs, evenly spread by tilting the pan or using a spatula.
6. while eggs are firm on the bottom, but still slightly runny on top,add the shredded cheese over the eggs. You will know that the omelette is done when there is no more liqguid left in the eggs.
7. Take 3/4 of your ingredients, and evenly sprinkle over the spread out eggs.
8. Pay special attention that the eggs are not sticking to the bottom of the pan. use your flipper or spatula around the edges of the omelet, about an inch or two. Then roll or fold the ends of the omelette, closing in the ingredients.
9. Roll your omelette onto your plate, or use your spatula and lift it onto your plate.
10. (I usually place my remaining ingredients on top of my omelette and sprinkle with cheese)..

the most important thing in omelets are eggs, the other is up to you. you can make veggie omelets non vegetarians, just mix things that you like with eggs. dont forget fat in pan.
