What are some ways to work more olive oil into my diet?
Olive oil has many health benefits, however I don't ever get the chance to eat it much. I don't like italian dressing so not there. The only thing I really use it for is as a bread dip (mixed with herbs and balsamic vinegar) and for some cooking.

I do use it for cooking...however does anyone know if cooking olive oil at a high temperature reduces any of its health benefits? I know that some unrefined oils are more healthy because they haven't been heated to high levels, and can only be used for cooking temperatures lower than 300 degrees f.

There are definitely ways to get more olive oil into you diet, but remember its not the olive oil in and of its self that you want its the Polyphenol antioxidants that olive oil contains that are good for you. Polyphenol antioxidants are found in all kinds of berries and fruits and veggies, and green tea and red wine. The ones that generally have higher amounts are deeper colored- not always, but as a rule of thumb- the more colorful the more healthful. Reach for the dark leafy greens before the ice burg lettuce and try some fruits like pomegranate. But if its really just oilve oil that you want more of first, make sure that its only "extra virgin olive oil". Just regular olive oil doesn't have as many health benefits, it mostly just has fat. You can put it on just about everything, try keeping a bottle of x virgin on your dinner table and pour a bit on what ever your having, in brazil people put it on pizza, and salad, and rice, and pasta, and bread, and potatoes, really where ever you want. But just keep in mind its still oil- and just as important as getting good nutrients is maintaining a diet low in fats- even good ones.
cook with it. sautee veggies, pan fry chicken or fish. you can dress a salad with it + vinegar - without the herbs in italian dressing.
use it in cooking... instead of vegetable oil.
However, if you're using canola, you are getting benefits their too.
What about making your own salad dressing with lemon juice and olive oil with different kinds of herbs?
use it in place of all the oils you use you can fry with it make salad dressings with it use it in cakes etc

Try to substitute Butter whit Olive oil when you can. I'm Italian and I can image may be for you the taste of Olive Oil is strong than butter but Try this change especially when you cook vegetable.
oil and vinegar dressing. if you have a popcorn maker at home, you can substitute olive oil for the regular oil. It gives the popcorn a nice flavor.
I use it with salad and cooking any kind of meat...
