What goes good with meatloaf?!

What goes good with meatloaf?

no mashed potatoes or regular salad something else more edgey.


Answers:
We usually have baked taters. You can do a twice baked tater where you bake, scoop out the insides and mix with some cheese and bacon bits, mashing that with just a bit of milk, put back into the skin and bake again. How about some corn or green beans? Or some hot, crusty French bread? Some steamed broccoli with some garlic butter or cheese melted over it?


Funny how all these idiots say "mashed potatoes" when you specifically say "NO MASHED POTATOES"

Oven roasted potatoes with rosemary (see recipe below), and some asparagus are good side dishes with meatloaf. You could always have a baked potato, or twice-baked potatoes.

Rosemary Roasted Red Potatoes

12 - 15 baby red or yukon gold potatoes
3 tablespoons olive oil
1 tablespoon butter
1 tablespoon fresh minced rosemary
1 tablespoon fresh minced garlic
1 teaspoon freshly ground course black pepper
1/2 teaspoon salt

Heat oven to 350 degrees. Wash potatoes and cut into half or quarters, which ever you prefer. Place potatoes on a clean sheet pan and spread out so the potatoes are evenly layered. Let the potatoes air dry for 5 minutes making sure they do not start to color from oxidation.

Place potatoes in a large bowl and add remaining ingredients and toss to combine well. Return the potatoes to the sheet pan and place in oven for 45 minutes or until tender.

how about peas with pearl onions?

Grilled asparagus, rice pilaf, boiled new potatoes with thyme, spinach and artichoke salad...

asparagus (sp?) or some kind of dark green veggie

Bake potatoes in the oven with the meatloaf.Also bake winter squash with the meatloaf.

A starch like mashed potatoes, baked potatoes, mashed or baked sweet potatoes. Macaroni and cheese, fettucini or any pasta with alfredo sauce or marinara sauce. Candied carrots, broccoli, asparagus, string beans. Dinner rolls and butter. or garlic bread. Apple sauce. Hope I've helped.

Oh sorry didn't catch the edgy part. Meatloaf is not very edgy.

Chili Lime Corn on the Cob

Frozen or fresh corn on the cob
butter
limes cut in half
chili powder, salt, and pepper for sprinkling

Cook your cob as usual. Slather with butter, squeeze on some lime juice, and sprinkle on the seasoning. You can also roll the finished cobs in a nice crumbly Latin style cheese if you like.

In Germany we make meatloaf with "Bratkartoffeln" and "Rotkraut".

Which is kind of hashbrowns and red cabbage. Here are the recipes:

3 med potatoes -- boiled,peeled,sliced
2 med green peppers -- seeded and chopped
1/4 med onion -- sliced
3 tbsp pickling cucumbers -- chopped
1 bunch spring onions -- chopped (green onion)
2 tbsp extra virgin olive oil
salt -- to taste
pepper -- freshly ground

Fry onion with oil for 1 min. Add potatoes and fry until golden, add all the other ingredients except spring onion. When done sprinkle spring onion on top and serve.

Red Cabbage

1 medium red cabbage
1 bay leaf
2 tbsp vinegar
2 small apples
1 salt
1 pepper

Shred cabbage finely. Peel and slice apples. Add all ingredients. Cook til tender, about 20 minutes.

Creamy pasta dish. Cut meatloaf into slices or chunks and put on top depends on what you want your choice.

Now that the weather is warming up how about potato or macaroni salad? Rice is also good. You can cook it in beef or chick. broth instead of water. When cooked add sauteed mushrooms and diced sauteed green onions. A couple of good side dishes are green beans w/bacon or small green peas with grilled onions. ( once you try these peas you won't want them any other way.) A good crusty bread or hard rolls go well too. Make a big meatloaf, leftovers are great! Enjoy

Easy Cheesy Potato Casserole

1 pound Velveeta cheese, cubed
2 cups mayonnaise
1 (2 pound) package frozen hash brown potatoes, thawed
1 white onion, chopped
1 (3 ounce) jar real bacon bits

Preheat oven to 350F. In the microwave, melt cheese in a large microwave-safe bowl. Stir in mayonnaise, potatoes and onions. Spread in a 9x13 inch baking dish and top with bacon bits. Bake in preheated oven for 1 hour, or until hot and bubbly.

egg noodles with gravy or rice

some sauteed cremini with shallots and garlic...sherry cream...to sauce consistency....but mashed and gravy are the best.

Mashed potatoes and peas.
