How do you cook cornbread in a cast iron wedge pan over an open wood fire?
We are afraid the bottom will burn and the top will not be done. We do a lot of camping and would like to learn how to cook cornbread in the cast iron wedge pan we were given.
Answers:
Like a pancake:
1 cup cornmeal
1 cup flour
1/4 cup sugar
1 tbsp baking powder
1 egg
1 cup milk
4 tbsp butter, melted
Melt bacon drippings (or oil) in an iron skillet. In a large bowl, mix dry ingredients. In a separate bowl, beat egg with milk and butter. Add to dry ingredients and stir just until moistened. Fry over low campfire until bubbles start forming on the top of batter. Using a metal spatula, carefully flip cornbread over and cook until a toothpick comes out clean when inserted into cornbread.
Corny Cord Bread - Add 1/4 cup corn kernels (fresh, frozen or canned) to batter.
Cheddar Corn Bread - Add 1/4 cup shredded Cheddar cheese to batter.

I know you want to use the cast iron wedge pan, but if you don't have a Pie Iron (also known as a sandwich cooker) you should really get a couple - it takes a lot of guesswork out of fire cooking and is really neat and easy.

as long as you cook it slow it will be just fine.. use smoldering coals not open flames. I have done this several times and it is truely the best corn bread in the world.. keep it covered and slow cook it..
the important thing is keeping it on a grate over low fire. this is the best thing to wake up to after a night in the tent/camper.\
use this same tech for cornbread
Lazy Cobbler
1 large can of sliced peaches
1 package white cake mix
butter
cinnamon
Preheat the Dutch oven, then remove from heat. Pour peaches with the syrup from the can into the oven. Sprinkle the dry cake mix on top of the fruit. Place several small pats of butter on top and sprinkle with cinnamon. Put lid back on oven and cook over a moderate coals for about 45 minutes.

as long as it has a lid and you don't put it down to low in the fire you will be good and so will the corn bread. it will also be better if you put corn and chilis or either one and it won't get too dry you can also bake what i like to call camp fire cake in it. just buy a cake mix (with pudding is better) and follow the directions.... you know except the whole oven thing. enjoy
