Also, how can potato pancakes taste so good to others, but terrible to me? Why are taste buds so different?

I think others crave sweets based on how fast their blood sugar rises and falls. This is all connected to the insulin level in the blood that is released by the pancreas. This is also connected to stress levels and adrenal glands. I think a lot of people also have emotional ties/associations to various foods, hence "comfort foods" - mostly sweets and carbs. People also have texture issues with foods or adverse associations with food. I guess it's one of the beauties of being different from one another.

I don't know!, But I wish I was one of those people who didn't crave sweets. It's so hard sometimes. Damn! Now I want something sweet.
Everyones tastes vary. Some people have highly sensitive taste buds, and some flavors are just too strong for them. Taste preferences are also determined by what they grew up eating (cultural preferences) and whether their parents introduced them to new foods and encouraged them to try things.
Many foods in the American diet contain unnecessary extra sugars, so we grow up craving that extra sweet taste. Sweet foods found in nature contain slower absorbing carbohydrates that sustain our system and energy, which is why we biologically crave sugar. Even breast milk, an infant's first food, is sweet. Highly refined sugars bring on the "sugar high" but soon a crash that leave you craving more in an endless cycle that's hard to break. I used to crave sweets until I had to stop eating processed sugar entirely for a while. The first time I ate a cookie, it was entirely too sweet for my tastebuds and made my jaw ache. So tastebuds can be trained.
Cravings for certain things, such as sugar or alcohol or caffeine are also things you've become addicted to, and your body starts to react badly (headaches, shakes, etc) so you give in to your cravings to alleviate the undesirable reaction.
