10 small squid
For stuffing
10 small prawns (shelled and finely chopped)
1 large onion, finely chopped
1 medium tomato, finely chopped
2 green chilies, chopped
4 cloves garlic, finely chopped
1/4 teaspoon turmeric powder
1 teaspoon garam masala powder
1 tablespoon oil
1 tablespoon coriander leaves, chopped
salt
toothpicks, for sealing
Clean and wash the squids thoroughly.
(Leave the fins and tentacles for stuffing).
Apply half the limejuice and salt on the squids.
Keep aside for 5 minutes.
Heat oil in a pan.
Add the chopped onion, garlic and chillies.
Fry for 1 minute (till it becomes soft).
Add the chopped prawns and squids (fins and tentacles).
Add the turmeric powder.
Cover and cook for 3 minutes.
Add the tomatoes, garam masala powder and salt.
Cook till it becomes dry.
Finally add the corriander leaves and allow it to cool.
Fill the stuffing in the squid pouch and seal it with toothpicks so that the stuffing should not spill.
Shallow-fry it on low flame till golden brown.
Serve with onion and lemon.

INGREDIENTS
1 pound squid
8 ounces shrimp, peeled and deveined
8 ounces orange roughy fillets
1 tomato, seeded and chopped
1 small onion, quartered
1/2 cup olive oil
1/2 teaspoon salt
1/4 teaspoon paprika
3 tablespoons dry white wine
1 slice white bread
4 slices lemon, for garnish
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Clean squid, removing tentacles, spine and outer skin. Rinse well in cold water and let drain on paper towels.
Coarsely chop shrimp. Flake orange roughy fillets and combine with shrimp, sprinkle with 1/4 teaspoon salt
Blot squid with paper towel to remove any excess water. Use a small spoon to pack each squid with fish/shrimp mixture leaving 1 inch unfilled at bottom. Secure open end with a toothpick and place in glass baking dish. Repeat until filling is gone. Any extra squid can be cut into rings and scattered over the stuffed squid.
Place tomato, onion, olive oil, 1/4 teaspoon salt, paprika, wine and bread in a blender or food processor and puree. Pour mixture over stuffed squid.
Cover dish with aluminum foil and bake in preheated oven for 1 hour. Remove foil and bake for another 30 minutes. Serve warm, garnished with lemon wedges.
If your squid itself is fried, I suggest the French Sea Food Sauce.
It is available on the market and got a pinkish color.

Dear Mich - sauce for fish is a no-no. It hides and doesn't exalt the taste. They'll sauce it in restaurants to hid fish that is less than fresh.
Anyways: Salt and pepper.... or whisk up half cup of olive oil, juice of half a big lemon, oregano and some chopped up parsley.
Finally - lemon on fish.... there isn't a white wine in this world that can be matched to a citrus fruit. So don't lemon your fish and drink expensive white wine.

When done: ad a tin of tomato sauce with olives a little honey cook for another 5 min - and plenty of wine - white wine for a light taste, for rich taste use red wine. when done: sprinkle with fresh herbs- serve seafood with sparragus or with steamed fresh green beans

Fry the veggies in olive oil, dump in the rest, simmer for about an hour, taste it and add salt or seasonings as needed. This sauce is also really good by itself, or with shrimp or chicken.
