Tangy Hot Chicken Salad
* 2 Chicken Breast Fillets, Skinless and Boneless
* 150g Lettuce
* 2 Medium Capsicum Peppers
* 2 Onions
* 30g Butter
* 2 Medium Stalks Celery
* 25g Toasted Almonds
* 2 Dtsp Sultanas
* 50g Sundried Tomato & Chilli Salad Dressing, Loyd Grossman*

Method

1. Dice chicken into small pieces; finely chop onions and peppers.
2. Melt butter in pan over medium heat and add chicken.
3. Shred lettuce and slice celery.
4. When chicken is almost cooked, add the peppers and onions to pan to soften slightly.
5. Once chicken in cooked, drain contents of pan and toss together with lettuce, celery, almonds and sultanas.
6. Divide equally between 2 plates and drizzle on chilli dressing.

Romaine or Red Leaf lettuce, tomato, carrots, celery, a little bit of cheese, maybe a sliced boiled egg. Dressing of olive oil and red wine vinegar with a pinch of oregano. Tasty and healthy.

Rocket salad with olive oil drizzled allover it and then slightly roasted pine nuts sprinkled on top,yummy!

Tuna Salad - Romaine lettuce, cucmbers, tomatoes, avacado, radishes, sunflower seeds, black olives, and canned Tuna. Homemade oil & vinegar dressing, served with brown rice. Yummy.

Anti-Pasta Salad

a large jar of marinated artichoke hearts
calmatra olives
fresh bella mushrooms
grape tomatoes
feta cheese (seasoned black pepper)

The oil from the artichokes is sufficient enough so just mix everything together and let it marinade in the refrigerator for a couple hours.
