Why fake crab? Because real crab is about $8 a pound. I have some in the freezer and want to save it. I LOVE fake crab as well, so I need some recipes!

(Fake) Crab Stroganoff
1 (8 ounce) package wide egg noodles, cooked
2 tablespoons butter
1/2 lb mushrooms, sliced
1 (10 3/4 ounce) can cream of mushroom soup
1 cup milk or fat-free half-and-half
1/4 cup marsala wine
16 ounces imitation crabmeat
1 (10 ounce) package frozen peas, thawed
8 ounces sour cream
2 tablespoons parsley, minced
1/2 teaspoon ground cayenne powder
salt and pepper, to taste


1. In butter, cook mushrooms until all liquid is absorbed.
2. Stir in soup, milk, and wine and bring to boil.
3. Reduce heat, stir in crab, peas, and sour cream.
4. Heat through, but do not boil.
5. Toss with noodles and parsley; serve.

Fake? Why fake? Get the real thing. But if you must:
Throw together a nice "crabmeat" salad.
Shred, the "crab"
add:
chopped, celery, chopped or grated onion, crushed tarragon, salt & pepper, mayo
You could throw a little curry & dry mustard in there to spice it up a bit.

OR

saute it in a little olive oil. Add herbs, crushed fresh garlic lemon, a little white wine (or dry vermouth) and serve with brown rice cooked with chives and a little soy sauce

Crab & Swiss Quiche
INGREDIENTS
2 egg, lightly beaten
1/2 cup milk
1/2 cup mayonnaise
1 teaspoon cornstarch
1/2 pound imitation crab meat, flaked
1 1/2 cups shredded Swiss cheese
1 (9 inch) unbaked pie crust
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together eggs, milk, mayonnaise and cornstarch. Mix in the imitation crab and Swiss cheese. Pour into pie shell.
Bake in preheated oven until a knife inserted into center of the quiche comes out clean, about 30 to 40 minutes.



Crabmeat Salad
INGREDIENTS
1/2 cup diced red onion
1/2 cup diced green bell pepper
1/2 cup diced celery
1 pound imitation crab meat, flaked
1/4 cup sour cream
1 1/2 cups mayonnaise
2/3 cup Italian-style salad dressing
2 tablespoons lemon juice
1/2 teaspoon dried oregano
salt and pepper to taste
DIRECTIONS
In a large bowl, combine onion, green pepper, celery and imitation crab meat.
In a separate bowl, mix together sour cream, mayonnaise, salad dressing, lemon juice, oregano, salt and pepper.
Pour the dressing mixture into the crab/vegetable mixture and toss lightly to combine. Cover and chill at least 2 hours before serving.

I use it when I can't get fresh crab. Just substitute it for fresh in any recipe.

Crab and Sweet Corn Soup

INGREDIENTS
2 cobs of corn
1 tablespoon olive oil
3 spring onions, white and pale parts only, finely chopped
1? litres good fish stock (or chicken stock)
2 birdseye chillies, seeded and chopped
170 g tinned crabmeat, drained
? cup coriander leaves

METHOD
Remove corn kernels from cobs with a sharp knife and reserve both kernels and cobs. Heat oil in a saucepan and cook spring onions over a low heat until soft. Add stock and corn cobs and simmer over low heat for 5 minutes. Remove corncobs and discard.
Add corn kernels and chilli to saucepan and simmer over medium heat for 5 minutes or until corn are just tender. Place half of mixture into a food processor and process until smooth.
Return mixture to saucepan with crabmeat, and heat gently over low heat. Season to taste and serve topped with coriander leaves.

PS I'm not keen on chilli or coriander so I swapped 1/4 small red capsicum for the chilli and parsley instead of the coriander.

Ceviche!


5 pounds artificial crab meat, cut into cubes
2 lemons, juiced
2 limes, juiced
1 red pepper, finely diced
1 green pepper, finely diced
1 yellow pepper, finely diced
1 red onion, finely diced
2 jalapenos, seeded and finely diced
1/2 cup whole cilantro leaves
1/2 cup whole parsley leaves
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper
Tortilla chips or crackers

Spread the fish evenly in a large, non reactive pan. Mix all of the citrus juice and pour over the fish. Cover and refrigerate for 2 hours. The citrus juice will cook the fish throughout. Add the rest of the ingredients and season with salt and pepper. Serve with tortilla chips or your favorite cracker.

tomatoes
limes or lemons
salt and pepper
Flake crab and dice onions.tomatoes,and chop ciltrano.
add lemon and salt and pepper to taste..eat with chips or crackers.
Wanna make it spicy,slice jalepenos..
