can you make bolognaise sauce? if you can it's the same, except instead of oregano and basil, put in chili, cumin and coriander......
if you don't know how to make bolognaise...

fry some onions and garlic in a pan.
Add in mince, cumin, a chilli pepper or chilli powder whatever you have.
Mix in a tablespoon of flour, mix thoroughly, you are trying to cook out the flour. #
take of heat and add teaspoon of tomato puree, mix well, return to heat.
Slowly add in some stock or a tin of chopped tomatoes.
( I add in grated carrot here to make it tasty)
Stir , leave to cook for about half an hour on a low heat.
Add in some chopped coriander, a tin of kidney beans, drained and rinsed.
Serve with rice.
Add as much chilli as you like depending on taste. But it's easier to add more in, than take it out...and remember the spiciness should increase with the lenght of time it cooks.

And most important, wash your hands immediately after handling fresh chilli peppers...
and add quarter teaspoon of sugar, takes the tartness away from the tomatoes

fry off your beef add onions garlic until soft drain kidney beans and add. then add chilli powder and tomatoes (chilli to taste) you may need 2 tins of tomatoes or just add a little scottish stock (water) then boil they life out of it for about 30 minutes and serve with rice

Easy

Brown a pound of ground beef and an onion and a green pepper chopped up...cook until meat is done and onions are tender, not dark. Drain really well.

In a crock pot or other pot, put beef/onions/peppers, canned kidney beans (dark or light or both, I use one big can and usually one or two small)...chili powder to taste, salt.....hot sauce if you wish...optionals are onion powder, garlic powder or garlic salt instead of regular salt.

Heat as long as you like on simmer. Add more spices if you wish.

Serve alone or with crackers or dollop of sour cream in bowl or cheddar shredded!

this is the recipe my mother uses and I've used it several times


1 pound ground beef
1 medium onion...chopped
1 small can red kidney beans...drained & rinsed
1 small can chili beans (mild or hot)
1 large can crushed or diced tomatoes
1 large bottle of tomatoe juice...using only what is needed
salt, pepper to taste
garlic, chili powder to taste

sautee onions until tender, add ground beef and cook until down...drain off any liquid. Add all other ingredients putting in tomatoe juice in last as you may not need the entire bottle. Let cook for about 1/2 hour at medium heat and taste to make sure you have added the right amount of seasoning. If you haven't add what you want and let cook for another 15 minutes. If you have then lower heat and let simmer for another 15 minutes.

If you like macaroni in your chili...cook according to box instructions and add to chili after chili is done...do not cook in chili as pasta starch will make chili taste nasty.

Use as much as you need to feed you or the crowd:
ground beef, sausage or ground turkey(Turkey takes on the flavor of whatever seasoning you add to it and is less expensive and fattening). Drain the grease and set aside use red kidney or any canned chili bean, it will be preseasoned.
If adding pasta, ie,...broken spaghetti, or macaroni, cook according to package instructions(I usually taste for my desired texture,) rinse in cold water and set aside. Combine in a large pot; The ground meat, the beans, 2 small cans of tomato paste, about 4 - 6 of the same can of water(more or less depending on your desired consistency), diced tomatoes, 1 small diced onion, diced green pepper, minced or powdered garlic, chili powder to taste, seasoned salt, pepper, crushed red pepper if you like it hot, maybe some diced jalapeno and it's juices, and just a lil sugar to even out the heat and spices. Simmer these ingredients for about 30 minutes at a minimum and only add the pasta back in for the last 5 to 10 minutes to heat so it won't over cook. You can cut out or add what ever you like, those are the basics, not so much the garlic, I just love it and use it in any thing with meat!

Barbara is a good answer - Be careful with the ground cumin, there are 2 seeds which depending on which language you use, may get confused. Kummel (in german) is a sweet aniseed type thing and I have seen this sold as cumin in some places. The 2 are very different and the wrong one will ruin your chili. The best thing is to try and get a whiff of it before you buy it. So, this and fresh coriander sprinkled over the final dish will taste great!

1st Annual World's Championship Chili

4 pounds coarsely ground sirloin
Olive oil or butter
2 (6-ounce each) cans tomato paste, thinned with water
3 to 4 medium onions, chopped, about 3 cups
1 green bell pepper, chopped, about 3/4 cup
2 to 10 cloves of garlic, minced (or to taste)
3 tablespoons commercial chili powder, or more to taste
1 tablespoon ground cumin
1 tablespoon dried oregano
1/2 teaspoon dried basil

1. In a 4-quart pot, cook meat in a little olive oil or butter (or a blend of the two) until no longer pink. Drain excess fat.
2. Add remaining ingredients and simmer 2 to 3 hours with the lid on.

Makes 6 to 8 servings.

SPREAD cream cheese onto bottom of microwaveable pie plate; top with chili and Cheddar cheese.
