What is the best cut of beef for steak fajitas?
I want to make steak fajitas tonight, and I wondering what would be the best cut of beef to use. I'll be grilling it.
Answers:
The first answer. Skirt and flank are the two most commonly used. Skirt steak is more often the thickness you seek for fajitas, though I'd prefer the taste of flank. So if you get a flank you'll want to get the flatest pieces you can find. For skirt, don't forget to remove the membrane (muy importante).
skirt or flank steak. have your butcher cut it into very thin strips for you, if you are going to grill it before you cut it do not over cook it....easier to have butcher cut it for you and then cook it on a screen or foil on your grill and it doesn't take very long either, also tell him you are making fajitas with it so he will know the grain to cut it (for fajitas it is against the grain not with)
Flank Steak...at least that is what Alton Brown "Good Eats" says;) It has worked well for us so far. Good Luck to you!
Flank Steak. Do not preslice it, cook it whole then slice it when it's done.
T-bone
any cut except for vein cuts and fillets
I use rump steak for my fajitas, but I fry mine in the frying pan, not grill. I think grilling tends to dry it out.
Beef Skirt Steak. Be sure to season it. Lemon pepper, salt, and pepper make excellent seasonings.
Any tender cut will be good rump, flank etc....avoid cuts with bones though...they have good flavour but R hard to cut & presumably u will be putting lots of other things in the fajitas so the subtle difference in flavour wont be an issue.
