My Beef Stroganoff
12 ounces sirloin steak, cut into thin strips
2 teaspoons vegetable oil
1 small onion, halved and sliced
8 ounces sliced mushrooms
1/2 cup sour cream
1/4 teaspoon dill weed
1/2 cup sliced green onions

Heat oil in a large skillet over medium heat. Add beef strips, onion, and mushrooms. Cook, stirring, for 5 to 7 minutes, until beef is cooked and onions are tender. Add sour cream and dill weed; stir to blend.

Taste and add salt, as needed. Transfer to a serving platter and garnish with green onions. Serve with hot buttered noodles or rice.

Coat meat with flour.
Heat large skillet, add butter.
Add meat and brown quickly on both sides Add mushrooms, onion and garlic to skillet. Cook 3-4 minutes until onion is crisp-tender. Remove mixture from pan Add butter to pan drippings, blend in flour.
Add beef broth.
Cook & stir over medium-high heat, until thickened & bubbly, then return meat mixture to pan. Stir in sour cream.
Cook slowly until heated through.

Ingredients
675g/1? lb beef fillet, preferably cut from the tail end
65g/2?oz unsalted butter
1? tbsp paprika (hot Hungarian, if you like a little subtle heat)
1 large onion, very thinly sliced
350g/12oz button mushrooms, thinly sliced
3 tbsp sunflower oil
300ml/10fl oz soured cream
2 tsp lemon juice
small handful of parsley leaves, finely chopped
salt
freshly ground black pepper
For the matchstick potatoes
450g/1lb floury potatoes, such as Maris Piper, peeled
sunflower oil, for deep-frying



Method
1. Cut the steak into slices 1cm/0.5in thick, then cut each slice across the grain into strips 1cm/0.5in wide.
2. For the matchstick potatoes, cut the potatoes by hand into short sticks 3mm/0.2in thick or use a mandolin. Set aside in a bowl of cold water.
3. Heat the sunflower oil for deep-frying, either in a large pan or in a deep-fat fryer, to 190C/375F.
4. Meanwhile, melt the butter in a large frying pan, add the paprika and onion and cook slowly until the onion is soft and sweet, but not browned.
5. Add the mushrooms and fry gently for three minutes. Transfer the mixture to a plate and keep warm.
6. Drain the matchstick potatoes and dry thoroughly in a clean tea towel or a salad spinner.
7. Plunge the potatoes into the hot oil and fry for three minutes, until crisp and golden. Drain briefly on kitchen paper and keep hot in a low oven.
8. Using the same pan you cooked the onion mixture in, heat one and a half tablespoons of sunflower oil until very hot.
9. Add half the fillet steak and fry quickly, seasoning and turning it as you do so, for just over one minute. Transfer to a plate and repeat with the rest of the oil and steak.
10. Return the onion mixture to the pan and pour in the soured cream. Bring to the boil and simmer for a minute or so, until thickened.
11. Return the steak to the pan and heat very gently for one minute - the beef should not be cooked any further.
12. Stir in the lemon juice and parsley and serve with the matchstick potatoes.

sorry i haven't been abe to kill the elusive stroganoff but i am hot on the trail, i am writing to you from my hunting tent high in the mountains of kansas. I have been tracking a small herd of stroganoff for weeks now but to no avail. they seem to be several steps ahead of me....hence that is why i'm following them otherwise i would be in front of them and they woud be following me....wait perhaps that is it, maybe i am the hunted OMG i must get out of here before it's too la...............................

Beef Stroganoff

Ingredients:

* About 2 pounds top sirloin steak, trimmed of visible fat, cut into 1/3-inch strips
* Salt and pepper (optional)
* 1 tablespoon canola oil
* 1/2 cup finely chopped shallots
* 3/4 pound thickly sliced mushrooms
* 10 1/2-ounce can beef consommé
* 2 tablespoons Cognac (vodka can be substituted)
* 3/4 cup fat-free half-and-half
* 1 tablespoon Dijon mustard
* 1 tablespoon chopped fresh dill
* 8 cups cooked whole-wheat blend pasta of your choice
* Paprika, as desired

Preparation:

1. Pat meat strips well with paper towels, and sprinkle lightly with salt and pepper if desired. Heat oil in heavy nonstick frying pan over high heat. Add meat in single layer and cook just until brown on both sides (about 1 minute per side). Remove meat to a holding plate.
2. Add shallots and mushrooms to the same frying pan and heat over medium-high heat. Pour 1/8 cup consommé over the top and simmer until mushrooms are tender, scraping up browned bits as it cooks (about 6 minutes).
3. Pour in the remaining consommé and cognac and continue to cook until liquid thickens (about 10 minutes). Stir in the fat-free half-and-half and the Dijon mustard. Add the meat strips and any juices from the holding plate. Simmer over medium-low heat until the meat is heated through and cooked to your desired doneness (about 2 minutes). Stir in chopped dill. Add salt and pepper to taste if desired.
4. Serve stroganoff over cooked noodles and sprinkle paprika over the top as desired.

Yield:
6-8 servings

Ground Beef Stroganoff:

2 lbs ground beef
2 medium onions, chopped
2 cloves garlic, minced
1 (4 ounce) can sliced mushrooms, drained
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 cup beef bouillon or consomme
3 tablespoons tomato paste
2 tablespoons flour
3/4 cup sour cream, mixed with the flour

1. Brown ground beef in large skillet; add onions, garlic and mushrooms.
2. Saute until onion is golden brown.
3. Put in Crock Pot with all remaining ingredients except sour cream and flour.
4. Stir thoroughly.
5. Cover and cook on low 6-8 hours (or on High 3 hours).
6. Stir in sour cream and flour 1 hour before serving.
7. Serve over hot buttered noodles or rice.

Here's a quick easy one

2lbs beef your choice Cut in small pieces
1 large can cream of mushroom soup
2 small can mushroom pieces
1 large tub sour cream
3Tablespoons granulated garlic
1 lb cooked egg noodles

simmer beef for about 30 minutes add garlic cook another 10 minutes. Add soup, sour cream and mushrooms. Cook over low heat, while noodles cook, drain them put a cup full on plate and spoon sauce over noodles. SOOOO YUMMY!
Sometime I use hamburger in place of the beef chunks, just as good
