Vegetarian recipes?!


Question:

Vegetarian recipes?

I'm a vegetarian and I'm looking for some kid friendly, and Man friendly recipes. We always end up making TWO meals at dinner time, one for me..and one for them.
Anyone know of some great (vegetarian) meals that we all could enjoy?
Just a note, I do have eggs and dairy. And we don't do mushrooms.

Italian vegetable casserole

1 zucchini, sliced
1 yellow squash, sliced
1/2 red bell pepper, chopped
2 tomatoes, chopped
1/4 c. fat-free Italian dressing
2 c. brown rice, cooked
1/4 c. soy parmesan cheese
non-stick cooking spray

Directions:

1. Spray casserole dish with non-stick cooking spray.
2. Mix vegetables and dressing together in the casserole dish.
3. Cook vegetables in microwave for 10 minutes, stirring every 2 to 3 minutes.
4. Sprinkle parmesan cheese over the top of the vegetables.
5. Serve vegetables over rice.

Crunchy Veggie wraps

* 1/2 c. fat-free cream cheese or leave out!
* 4 8-inch flour tortillas
* 2/3 c. romaine lettuce, shredded
* 2/3 c. red cabbage, shredded
* 1 red tomato, diced
* 1/4 c. red onions, sliced
* 1/3 c. carrots, grated
* 1/4 c. blue cheese
* 1 c. alfalfa sprouts

Directions:

1. Spread 2 tbsp. cream cheese over one side of each tortilla.
2. Divide remaining ingredients evenly among tortillas.
3. Roll up each tortilla.
4. Cut each rolled wrap in half diagonally.

Serves: 4

Straight to the point:

Veggie burgers,(good ones, nice and thick) DON'T TELL THEM then after they ooh and ahh tell them,

also just use recipes that normally have meat and replace the meat with something hearty, like bits of veggie burger or veggie meats and so forth.

Kids will eat anything that looks good and if they don't know whats in it, so make your dishes look good!

1. Macaroni with balls of mozzarella and grape-tomato's
2. Deep dish bread pizza with veggies
3. Spaghetti with a thick red sauce, mix in bits of veggie meatballs

Sauteed Onion & Tomato Sandwiches:

Ingredients
2 medium onions, sliced
1 teaspoon olive oil
8 slices hearty whole grain or rye bread (toasted, if desired)
Honey mustard
3 small red and/or yellow tomatoes, thinly sliced
4 lettuce leaves, shredded
Small fresh basil leaves
4 ounces spreadable Brie cheese or tub-style cream cheese

Directions
In a large skillet cook onions in hot oil over medium-high heat for 5 to 7 minutes or until onions are tender and just starting to brown, stirring frequently. Remove from heat; cool slightly.

To assemble, lightly spread one side of 4 bread slices with honey mustard. Top with the onion slices, tomato slices, shredded lettuce, and basil. Spread one side of the remaining 4 bread slices with Brie cheese. Place the bread slices, cheese sides down, on top of sandwiches.

i'm a non-vegetarian and i like veg recipes like matar-gobi-aloo etc

eggplant parmensan (fried eggplant, spaghetti and tomato sauce)
Egg Fried rice and vegetable spring rolls (you can find this frozen)
Vegetarian lasagna (this is actually in the freezer's section and yummy)
(fast n easy) Mac& cheese with veggies (kids love it)
(fast n easy) grilled cheese sandwhiches and tomato soup
breakfast for dinner!( waffles, eggs etc)
beans and rice
