How to prepare a chuck tender roast in the crockpot?
Im trying to make a chuck tender roast and don't know what all I need to put with it in the crock pot.
Answers:
If you want a nice flavor to the roast, sear it in hot oil in a heavy pan on the stove, first! It will brown it and add a lot more depth to the taste.
After searing on both sides, place in crockpot and cover meat with stock or even water ( I have also added beer and wine...!). Add some sliced onion, crushed garlic, a bay leaf, some oregano, salt, pepper, a little rosemary, and crushed red pepper flakes....let simmer on low for 7-8 hours.
If you want to add veggies, don't add them until the last 2 hours....carrots, taters, parsnips, celery, onions...those are all nice in there...adds some more flavor! I have also added spinach and broccoli to mine, depending on my mood!!!
Trust me - browning the meat first will make all the difference in the end result!
This is the one I do and it turns out nice,
CROCKPOT CHUCK ROAST
3 lbs. chuck roast
1 can French onion soup
1 can cream of mushroom soup
3 carrots, sliced
4 potatoes, cut in thick slices
Salt and pepper
Put potatoes on bottom and roast on top. Cook 4 hours on high or low all day.
I put a can of beef broth and a can of cream of mushroom soup over roast and slow cook on low all day - the soups make a great gravy for mashed potatos
I add one envelope of dry onion soup mix and about 4-6 cups of water, salt and pepper.
First get your roast and a knife and poke holes in it, stuff the holes with fresh garlic. Then rub it down with seasoning, like salt and italian seasoning, worterchire sauce and a little olive oil, or whatever flavors you want. Place it in a crock pot with beef broth, onion, celery any kind of herbs you want to use. If you want veggies (carrots, potatoes etc) with the roast dont put them in the begining of cooking, but the last 2 hours. Cook on low and time according to weight of meat.
I put in either
-one roast, 2 potatoes cubed, 4 carrots sliced, 3 sticks of celery sliced, 1/2 green pepper, diced and a dash of herbs; oregano, parsley. Then water to submerge.
Slice beef, mash potatoes, and serve with the vegitables. The next day, dice the roast and add one can of diced tomatoes for some awesome stew.
-one roast, 1 jar of pickles, 1 jar of chili sauce.
shread beef after it's cooked and remove pickles, serve on rolls and keep the sauce to dip it in. It sounds gross, but it's SOOOO good.
Generally, root vegetables - potatoes, carrots, etc. are placed under the meat. Water, stock, tomato-based broth can be used to cover the meat and veggies, then place the lid on the pot and set it to cook!

Take roast, add choped celery, carrots and potatoes(about an inch thick). put all in crockpot. Add 1 pack onion soup mix and 1 can beef broth. Put on lid and cook on hi untill veg. are tender, then turn on low. It's so easy and good. Roast always comes out tender.
All of these recipes are good and will give you a tender roast. However, if you use a combination of dry onion soup and cream of mushroom soup, you will have a high sodium content. I would go with a low sodium can beef broth and a can of water to cover the roast... then some fresh minced garlic, pepper, parsley. And do brown the roast first. It does make a difference.
Many people use cream of mushroom. Try Golden Mushroom soup. WOW at the difference. I put that (and sometimes a can of the cream of mush. too) and a little water and leave it on low all day...it's funny, I have one cooking at home right now!
i make chuck roast in my 6 quart oval crock pot all the time and this is my no-fail method:
put bagged baby carrots in the bottom of the crock pot. place roast on top of carrots. cut up some onion and sprinkle on top of roast. add 6-8 cans beef broth to crock pot. cover and cook 8-12 hours. when ready for dinner, remove carrots and roast from pan. to make gravy, you can sprinkle powdered mashed potatoes into the remaining juices and stir OR mix cornstarch with cold water and then add to juices. both ways to make gravy are very easy. you can make the gravy to the thickness that you like. i make this frequently and this is the most tender way to do a chuck roast in the crock pot.
what you need to do first is season the roast with salt and pepper.get a frying pan really hot.dredge the roast in flour.put a little olive oil in the pan.brown the roast on all sides.cut up some celery, onion, and carrot.put the veggie mixture in the crock pot,put roast on top.add beef stock to cover.add fresh thyme and rosemary, put the top on and come back in 6-8 hours depending on the size of the roast.
