Healthy recipes? Maybe w/ ground turkey?

Answers:
Ground turkey tacos are fantastice & you don't even know the difference. 1lb ground turkey, 1 pkg taco seasoning, 1/2 can refried beans (or less) 1 taplespoon green chiles, chopped onion , 2 slices velveeta cheese. Mix & brown in skillet, serve as you would..Or the same as above, only spoon into soft shells, wrap & brown in sklillet, then skewrer green or black olive on top and throw in oven until really crispy. very, very good!( You can also add salsa to mix or on top)

This meatloaf recipe is nothing fancy but it's one of my favorite ground turkey recipes. It's just delicious. I give you the ingredients for three different sizes. We usually make the 3 lb. size because people tend to eat a lot.
1 lb.

2 lbs.

3 lbs.
Preheat the oven to 350°F.
Ground Turkey
(I prefer Shadybrook Farms) 1 lb. 2 lbs. 3 lbs.
Eggs (Large) 1 2 3
Hot sauce. I use a mild hot sauce. My favorite is a brand called Sharkey's (scroll down for picture) but it can be a little hard to find. If you are using regular hot sauce you might want to cut this back by at least half. This is especially true if you are serving the meat loaf to children. You can always add more to taste later. 1 tbsp. 2 tbsp. 3 tbsp.
Worcestershire Sauce
(I use Lea and Perrins) 1 tbsp. 2 tbsp. 3 tbsp.
Adobe Seasoning (Scroll down for picture) 1 tsp. 2 tsp. 3 tsp.
Vidalia Onion - Diced 4 ozs. 8 ozs. 12 ozs.
Extra Virgin Olive Oil (EVOO) 1 tbsp. 2 tbsp. 3 tbsp.
Bread - either white or whole wheat 2 slices 4 slices 6 slices

1. Put the ground turkey and all other ingredients except the bread slices into a large bowl.
2. Wet the slices of bread with water and then gently squeeze out the excess. Then pinch small pieces placing them in the bowl. It is not necessary to remove the crust. This is the secret to an unbelievably moist meatloaf!
3. Mix thoroughly.
4. Place mixture in appropriate size baking dish.
5. It's difficult to say precisely how long to bake your meatloaf since it depends on the dish you're using, your ovens characteristics, etc. I bake the 3 lb. meatloaf, covered, for 1? hours and then check to see if it's done. You want it to be done but don't overcook it. You want it to be moist.
6. Remove from oven and let stand for about twenty minutes.

Look up any recipe that calls for hamburger or ground round. etcetera, and substitute the meat. Ground turkey will be just as good as hamburger in any ground beef recipe. Spaghetti, meatloaf, burritos, tacos, enchiladas, stroganoff. I brown ground turkey seasoned with "season-all" and put it on top of my salad with some light sour cream and put it in a taco shell. It makes a great taco salad. Good luck.
