Good foods for weddings that you can make on your own?
I am having a wedding but wanted to save money by not hiring a caterer. I was going to cook the food on my own with the help of family and friends. Are there any suggestions of Texas/Lousiana dishes?

2 (6 ounce) cans crabmeat, drained
2 (8 ounce) packages cream cheese, softened
1 (4 ounce) can black olives, finely chopped
1 (4 ounce) can green chilies, finely chopped
1/2 cup fresh green onions, finely minced
6-8 flour tortillas, depending on how much filling you put on each one
1. Drain crab meat, and set aside.
2. Put the cream cheese into a glass dish, and microwave for 45-60 secs., to soften.
3. Blend softened cream cheese with black olives, chilies, and green onions.
4. Gently fold in crab meat.
5. Spread crab mixture over entire surface of each tortilla with a thin coating.
6. Roll tortillas up, and wrap tightly in plastic wrap.
7. Refrigerate at least 4 hours.
8. When ready to serve, cut each tortilla into 1/2" slices.
9. Put on a serving dish, and garnish with lime wedges and jalapeno slices.

11. To spice it up a little more, you can also add jalapenos into the mixture, to your taste. If you like it more on the mild side, remove the seeds and the white part of the jalapeno, then cut into strips and dice into small pieces.
12. You can make and freeze these ahead of time. Just take out well before serving time, to thaw out.

try vegetable trays using assorted cut up veggies like broccoli, carrots, cherry tomatos, green pepper rings, celery sticks there are lots of veggies out there, make finger sandwiches from those cute little rolls using egg salad, tuna salad, seafood salad (most large grocery stores sell this mixed up already) and ham salad, when my mom was a caterer she mad large pans of lasagna, meatballs (swedish and Italian) and pasteries such as small tarts, cookies for the little ones, cream puffs (easy to make) Good luck
how about a bbq or gumbo? low country boil sounds good too.
