Chocolate Cherry Cake
1 pkg. chocolate cake mix
3 eggs
1 can (21 oz.) cherry pie filling
1 c. sugar
5 tbsp. butter
1/3 c. milk
1 pkg. (6 oz.) semi-sweet chocolate chips
Combine cake mix, egg and cherry pie filling. Mix until blended. Pour into greased and floured 9 x 13 inch pan. Bake at 350 degrees for 35-40 minutes or until cake springs back when touched.
Frost when cool with following:
In a small saucepan combine sugar, butter and milk; bring to a boil, stirring constantly, cook 1 minute. Remove from heat; stir in chocolate chips until melted. Spread over cake.
Easy Chocolate Cake
Yield: 12 servings
Ingredients
1+? cup (170 g) all-purpose flour
2 tablespoons unsweetened cocoa powder (dutched/dark)
2 teaspoons baking powder
1 cup (200 g) sugar
1 tablespoon vanilla essence
? cup (1.2 dl) milk or water
? cup (1.2 dl) vegetable oil (flavorless)

Ingredients for frosting
2/3 cup (1.6 dl) heavy cream or whipping cream
9 oz (260 g) semisweet chocolate (40-50% cocoa)
Method
1. Preheat oven to 350 deg F (Gas mark 4 or 180 deg C)
2. Grease a 9 inch (23 cm) cake tin.
3. Mix flour, cocoa powder, baking powder, sugar and vanilla essence in a bowl.
4. Add milk/water, vegetable oil and eggs.
5. Mix everything together until smooth, either by hand or by using an electric mixer at slow speed.
6. Transfer to bake tin and bake at 350 degrees until a wooden pick inserted in center comes out clean, approximately 35 to 45 minutes.
7. After the cake has cooled, slice the cake through the middle to make two layers (easier if the cake has been in the fridge).
Frosting
1. Heat 2/3 cup (1.6 dl) of heavy cream or whipping cream in a sauce pan.
2. Remove from heat, add 9 oz (260 g) of finely chopped dark semisweet chocolate, stir until smooth, and let it cool until in thickens, if needed in the fridge.
3. Use one 1/3 of the frosting between the two layers, 1/3 on top, and the rest around the cake. Put the cake into the fridge for one hour or more to harden the frosting.
4. This cake should have room temperature when served.
Variations
1. You may substitute 1-2 tablespoons of cream with rum for the frosting.
2. You may cut the top of the cake to make a flat surface before adding the frosting.
Buy the cake mix if you don't know how to make it from scratch and bake for about 45 minutes or stick a tooth pick in ti to see if its done. Take the cake out of the oven , if its a layered cake, wait until it cools down. take the first layer and it over so the flat side sits on top then put the second layer on without flipping it over and spread the chocolate frosting on it.
buy a box of chocolate cake mix, if you follow the instructions it comes out good.
COCOA CAKE
7/8 c. sugar
1 egg
1/2 c. butter
1/2 c. milk mixed with 1 tsp. vinegar
1/2 c. hot water
1/2 c. cocoa
1 tsp. baking powder
1 tsp. baking soda
1 1/2 c. flour
pinch salt
1 tsp. vanilla
1 recipe Pudding Icing (recipe follows)
Combine all of the ingredients in a bowl. Beat in mixer at medium speed for 1 1/2 minutes. Pour into two 8" greased layer pans. Bake at 350° for 25 minutes. Cool cakes in pan for 5 minutes on a rack, then turn them out onto the racks to cool completely. Make icing while the cake cools.
COCOA CAKE PUDDING ICING
7/8 c. sugar
3 T. cornstarch
2 oz. unsweetened chocolate (2 squares)
1 c. boiling water
2 T. butter
1 tsp. vanilla
In saucepan, combine sugar, cornstarch, chocolate and boiling water. Cook, stirring until mixture thickens. Stir in butter and vanilla. Cool slightly before frosting cake.

1 small box devils food instant pudding mix
4 eggs
1/3 c. veg oil
1 tsp vanilla ext
1 1/3 c. milk
mix together & bake(in a greased & floured pan) at 325 until it springs back on top when lightly touched or toothpick comes out clean. about 35-40 min if 2 8" round cake pans.
