I fried up a few strips of bacon and crumbled it into the mixuture the last time i made deviled eggs. It got rave reviews!

mayo, spicey brown mustard, paprika. Make sure the eggs yolks are whipped to make them creamy.

DEVILED EGGS

6 hard cooked eggs.

2 tablespoons mayonnaise

2 tablespoons mustard

1 shallot, minced

Salt, (or celery salt), and pepper to taste

Cayenne pepper or paprika, as needed

Minced chives, as needed

Boil the eggs, allow them to cool, and then cut them in half lengthwise. Scoop out the yolks and mash with the mayo, mustard, shallot, salt and pepper. Place a scoop of the mixture in each of the twelve egg white halves. Sprinkle with chives and a generous amount of cayenne, or if you’re not a little devil, use paprika instead.

I love Deviled Eggs. I have a great recipe from Gourmet magazine.

6 large eggs
1/4 cup mayonnaise
1 teaspoon Dijon mustard
1/8 teaspoon cayenne
Hungarian HOT Paprika to taste
Chopped fresh chives

Ingredients:

eggs,
scallions,
mayo
cayenne pepper

Instructions:

Boil eggs and cut in half lengthwise.
Remove the egg yolks.
Mix egg yolk, scallions, mayonnaise, cayenne pepper.
Chop up real fine.
Other seasonings can be added to taste, i.e. dry mustard.
Place the mixture into the boiled egg whites.

Place eggs in water. When water starts boiling set timer for 7 mins. When timer goes of turn off the water and let the eggs cool in the water. When they're cooled, peel them, cut them in half and put the yolks in a dish. Chop up the yolks with a fork and add 2 table spoons of mayo, a dash of mustard seed, a squirt of yellow mustard, and a dash of pepper. Mix and spoon into the egg halves. Refrigerate until ready to be eaten.

# 6 hard boiled Eggs (large)
# 3 tablespoons mayonnaise or salad dressing
# 1 tablespoon sugar
# 1 teaspoon mustard (honey mustard is great!)
# 1 teaspoon vinegar
# salt & pepper to taste
# paprika (optional)

To boil eggs, place eggs in enough cold water to cover completely, bring to a rolling boil over high heat.

Reduce heat to a lower MEDIUM BOIL and cook an additional 12 minutes.
Promptly chill eggs so yolks stay bright yellow.

Remove shells from eggs, and halve lengthwise with a knife.

Carefully remove the yolks, and place in a medium bowl.

Mash yolks with a fork, and add remaining ingredients.

Very carefully spoon mixture back into the egg white halves. Garnish with a light sprinkling of paprika (optional).

Just Mayo, and a sprinkle of Cayenne pepper on top. Smooth texture with a kick!

* 6 hard boiled egg yolks
* 3 tbls mayo
*1 tbls mustard
*1 tsp fine ground horseradish
*salt or garlic salt/pepper to taste
*dash cayenne pepper
add this to your mashed yolks, stir well ,add more mayo if too dry.and then spoon into egg whites.

Sigh. Thanks to every one else for adding the technical details, but I say: Use mustard powder, not prepared mustard. That makes them less goopy. Also, add paprika to the filling mixture. I put dill pickle rellish, my mom uses sweet rellish, a matter of preferance, but you have to have one! And sprinkle more paprika on top after they are filled. Have fun.
