grill some Asian garlic chicken breasts and slice them up and warm up the rice and roll them up in a burrito size tortilla for an Asian wrap.

i make a mean jumbalaya with left over chinese food quite often.
just toss in some frozen shrimp and polish sasuage (pork or turkey will work).
slice up some green peppers, celery and onion, toss in a little hot sauce and salt, heat for about 10 minutes, stirring frequently, put overtop rice and eat up. it's really good.
I scramble some eggs and fry it in a pan with the pork fried rice, and use some duck sauce or a bit of A-1.
If there's any left, I use it in a tortilla. Maybe with some cheese.

You can use it to stuff veggies. You could make a casserole with it, but that might turn out goopy.
