You are about to have the best roast in your life, guaranteed! Heavily salt and pepper roast and put in large bowl and cover with almost whole 2 liter of Coke (yep, the pop) and refrigerate overnight. Next day drain off pop and put roast without rinsing, into crock pot and cover with 2-3 cans beef broth. Cook on high for 3 hours, then low for another 3 - 5 hours (can go longer if your not home yet). It will "fall apart" and stay so juicy. Makes great sandwiches next day if any is left! Please try, you won't be disappointed.
I do mine in a slow cooker with the veggies and seasoned beef broth and let it roast for 5 hours. it is moist and falls apart. It is soooo good.
Cook it in a crock pot. Low temps for long periods of time. If your meat and veggies are dry, you either didnt add any water or didnt add enough, or your meat could have been too lean that it didnt have any fat to make juice.
I buy the beef stew mix in powder form and mix one bag wth a cup of water and put it in the bag with the roast. the sauce will keep it moist. But I usualy put mine on 350 for a couple hours and it falls apart every time. The longer it stays in the heat after being "done" that's when it sarts drying out. I hope it turns out good.
Put one can of onion soup and one of cream mushrooms and turn your oven up to 325 or 350
use a liquid like water or broth
Pot roast is cooked in a pot. Get it? Use a dutch oven on the stove, brown roast all sides. Add beef stock and wine half way up the meat. Add bay leaf. Bring to simmer for 2 hours. Add vegetables, cook one more hour. (potatoes, parsnips, turnips, carrots, pearl onions, mushrooms.) Remove bay leaf. Serve on egg noodles, on a platter.
