i'm not exactly sure.. it has something to do with how the metal reacts with the dough after you leave it for so long i know that you can't use metal when you make sour dough pancakes either

The acid in the yeast might react with the metal, and you would get a grey mark on the dough that would actually be dissolved metal.

Simply put, metal bowls make the contents acidic.
