I am on a pasta kick lately, and this one screams summer - it's lemony and has fresh basil in it...not to mention that it's super easy!! I use it as a main dish, but I have also used it as a side dish to grilled fish and chicken....

Lemon Linguine

1 pound linguine
2/3 cup olive oil
2/3 cup grated Parmesan
1/2 cup fresh lemon juice (about 3 lemons)
Salt and freshly ground black pepper
1 tablespoon lemon zest
1/3 cup chopped fresh basil leaves

Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Meanwhile, whisk the oil, Parmesan, and lemon juice in a large bowl to blend.

Drain the pasta, reserving 1 cup of the cooking liquid. Toss the pasta with the lemon sauce, and the reserved cooking liquid, adding 1/4 cup at a time as needed to moisten. Season with salt and pepper. Garnish with lemon zest and chopped basil.

I have a wonder full light summer pasta dish. Penne with Steak and Arugula.

1 lb. Penne Pasta
1lb. Good quality steak (NY Strip or Fillet Mignon)
1 teaspoon Herb De Provence
1 Garlic Clove minced
3/4 cup Olive Oil + 3 table spoons
1/4 cup balsamic vinegar
2 tablespoons Dijon Mustard
Kosher Salt
Fresh Cracked Pepper
1/4 fresh chopped basil
1/4 fresh Italian Parsley
2 cups Arugula

Season the steak with salt, pepper ,herb de provence & garlic. Put 3 tablespoons of oil in a pan -or- if grilling steak (which I reccomend) rub on oil prior to seasoning. Cook steak until desired tenderness - 7 minutes a side for med rare. 9 for medium. Let meat rest for 5 minutes before thinly slicing it.

Large pot of boiling salted water, add pasta and cook per box suggestions. Reserve 1/4 cup of pasta water.

Combine vinager, mustard, oil, herbs, salt and pepper to taste - whisk together. In a large bowl toss the pasta with half the dressing & reserved pasta water. Add the steak and Arugula. Add the remaining dressing toss and serve.

You can serve this hot or at room temperature. Watercress or spinach can be substituted if you can't find arugula. I added some chili flakes for some heat and two chopped hard boiled eggs for added protien. The steak can be substituted with portabella mushrooms if you want it vegitarian. This is one of the best summer meals I have ever come across. My family loves it!

Order in.

In the UK, try to use vegetables which are currently in season. This means they are fresher as get to the shop or market quickly. It's good for the environment as they don't have to travel so far either!

Aparagus makes a nice simple starter, serve with butter or hollandaise sauce (I like it with a poached egg on top.)

Try some spring lamb as a main course, wth something not too heavy. Perhaps some minted new potatoes and broad beans.

For pudding, you could make a elderflower perry fruit jelly with some summer berries like strawberries, raspberries or redcurrants.

At this time of year you can't beat new potatoes and asparagus - they are at their best and so easy to cook and versatile to use. Steam them and serve with chicken
