How do I make smothered chicken?
Answers:
Salt, pepper to taste the chicken. Get some flour on a plate, add salt, pepper and a bit of herb that you like and mix.
In a bowl add an egg with a bit of water and mix.
In a fry pay, add a tablespoon of butter and tablespoon of oil. Heat to sizzling.
Chop up onions and mushrooms. About a cup each.
Open a can of chicken broth.
Reserve a tablespoon of butter, 2 tablespoons of flour.
Dredge chicken in flour, dip it egg and then dredge again in flour. Shake excess off and put in sizzling pan. Finish the rest of the chicken. When golden brown (3-4 minutes) turn over. When that side is browned nicely, remove from pan. Add a touch more oil if needed to add onions and mushrooms. Saute till softened. Salt and Pepper to taste. Use wooden spoon to scrape all the chicken bits.
After onion/mushrooms are soft, add reserved butter and flour. Stir with same wooden spoon. Add broth and stir till thickened. Add back chicken and put on low. Cover and simmer for 20 minutes.
Serve.

SMOTHERED CHICKEN
1 roasting chicken, cut or 2 broiling chickens
Thin biscuits, split and cut
1 c. milk
Salt and pepper
1 tbsp. butter
Place chicken in baking dish, arrange biscuits around chicken; add milk, seasonings and butter. Cover and cook at 425 degrees for 1 hour, basting occasionally with hot milk. More milk may be added if necessary so there will be sufficient left for gravy. Serve on a plate. Smothered with gravy and surrounded with biscuits. Serves 4-6.
